Hello there,
i'm looking for a MMO that has a complex economy system like EVE Online for example. With 'complex economy' I mean, that the crafting need to have an important role in the game. A pure playerdriven economy is not required. A bad example would be a needless crafting like e.g. in swtor. And no asia-Grinders, please.

I really don't think there are any, mate. The MMO is a dying breed. The Massive co'op hold-my-hand generation is now on top.

What is with some sandbox-titles like mortal online? is something in this area more suitable for my taste (+with a decent playerbase)?
Umm MO is a pile of crap basically. See also: The MO subforum.There is crafting in it but only armor and weapons, because the game is a huge death match arena. Just without players. No sandbox elements. No social content.
There's a LOT of crafting and terraforming going on in Wurm Online, everything there is playermade. Even the terrain you build your houses on is most of the time modified by players. But the economy is solely ingame-cash-for-real-cash from the website, even though other players will pay you for some work.
Eve has far and away the best economy of any mmo.
CCP seems to be the only company that understands for the game economy to work items must be destroyed regularly. Considering the amount of players who cry over death penalties, you won't see many titles where the economy works.

For a pure crafting game, you're not going to do better than A Tale in the Desert. If you're more into the economy and trading side of things, ATITD might be less ideal, as trading is something of a pain, so a lot of players just craft stuff for personal use.
If what you really want is complex crafting and a complex economy, then try Uncharted Waters Online. Koei makes things more complicated for the sake of making them more complicated, sometimes seemingly without stopping to ask whether it makes for good gameplay. A lot of items are known to exist, but if you want to actually get one, good luck figuring out how--even after looking at the online wikis and databases. That said, the game is pretty good.
I'll also throw Puzzle Pirates in there as a good economy game, if you're into crafting and trading. The game economy has quite a bit of depth, but isn't as complicated as the others that I mentioned.
Well, one feels the need to mention a non-asian grinder, Runescape, they even have some sorts of wall street with monthly, yearly price trends...
