Hi, im a newbie to both these forums and to EVE so forgive any stupid questions, please.
Anyway, I decided to download the 2 week trial version of Eve because ive heard so many great things about its open ended PVP system. Im a vet of MMOs in general so I vaguely know what Im doing, and in every game, its always been PVP all the way for me, I dont much care for anything else
So what I'd like to ask is, while this game downloads, could some of you guys give me a little buffer as to what the PVP system is like in EVE? How long will it be before I will be able to play with the big guys? What sort of skills should I train to gear my avatar towards a life of rough fighting?

You will be able to start frigate PvP in groups quite soon, although you won't be really effective. Getting better ships will need some time and money tho, cause you quite need a lot of money to buy/insure a ship.
I suggest you to put skill points into Spaceship Command, Gunnery/Missile Launcher, Electrics and Engineering of course. Though it would be much faster to train learning skills first, so you won't need as much time as before with other skills.

Do learning skills to level 5 and advanced to lvl 4. (read my post on learning skills)
Then do your ship command and ship skills.
The following is a rough list of what you'll need to be effective in pvp.

While learning all this its still possible to be an effective tackler in pvp. Tacklers basically jump on the target and warp scramble them so they cant get away. You'll die alot so make sure you have a clone and be ready to warp to a planet. To tackle all you need is a cheap fast frigate with a microwarpdrive a 20km warp scrambler and a 7km warp disruptor. It's cheap and it can be fun.

Best thing to do to get into PVP is to not be timid. Get out there, join a corp, post on the forums, let people know you want to get out there and kill. Don't sit around expecting it to be given to you, and don't go into low sec space looking for a fight ill-prepared because you WILL DIE!
You may get bored with the game prior to gaining all the necessary skills. The game is time and isk oriented, therefore I've found that I am doing things that are not combat related because the isk is quicker and more. Which means you need other skills, lol.
In a fleet you can be useful even with small ships and few skill points. Train the electronic warfare skills (there aren't that many) and you can turn the tide of battles often. Cooperation is key however.
The skills outlined by Copeland are great goals. But don't get discouraged. You don't need all of them to PvP, really.
The best thing you can do is once you have a respectable amount of skill points (ie can fly better frigates and cruisers, can use small and medium guns, missiles, canuse a 'microwarp drive', etc.), find a corp that is PvP oriented and dive in. You'll be used as a tackler, and you'll die a lot, but you'll learn a ton about how PvP in EVE actually works, as well as getting over that initial 'jittery' period when you first start PvPing. As you progress, you'll get to use bigger ships, bigger guns, do more damage and the like, but there's no real substitute for actual live combat experience, in whatever role.
What ever you do, don't waste any skill points on Charisma, at character creation time. If you want a good fighting character, first choose a race, and lineage that best supports a warrior heritage, all 4 races have such a package, though some are better than others at specialization (read better fighting skill attritbutes.) If you know that you want to be a powerful warrior, choose a base character with high Perception and Willpower attirbutes, these two are the primary attributes for training gunnery and missile skills. You'll also want a decent Intelligence and Memory, as these ar the primary attributes related to Electronics and Engineering skills.
The higher the attribute you have, the faster you will learn the skills related to that particular attribute. Thus, many people choose to do their learning skills first off. It will be a pretty boring month, but it's time you can use to familiarize yourself with the game and its mechanics. Once you're done with those, you will be able to knock many of your skill times in nearly half.
In order to become effective the fastest, learn as many skills as you can as soon as you can afford the skill books. Simply learning the skills to level 1 will give you the capabilities to use different types of modules, then train them up as needed. For example, pick up as many Engineering and Navigation skills as you can afford, train them all to level 1, then if you need one higher for a certain other reason, you can train it at your disposal.
If you want to get into the mix fast and competently, stick to the smaller ships and related skills. Just because you've taken the time to learn to fly a Battleship, doesn't necessarily mean you know how to pilot one (there's a ton of skills that take a long time to train, in order to be a good Battleship pilot), which can be a very expensive mistake, and one that is detrimental to many new players. They scrounge every penny they can for 2 months, jump straight into a BS, get it blown to bits the next day, and quit, because they over extended themselves and have to start back at square one. Your best bet is to aim small at first, specialiozed in a small turret weapon and get an interceptor or something. Once you're in a fairly capable ship, and have the skills to fly it, then start working on getting into a bigger ship.
Alot of the skills that you will train to be a good frig pilot will transfer to the larger ships, such as Navigation and Engineering skills. So once you get those to a respectable level, you will be pretty much ready for your Battleship. I waited 6 months before jumping into my first BS.
If you really like pvp, definately join a pvp corp and get Teamspeak. TS is nearly a requirement for many quality pvp groups. To find a good corp, go onto the Eve-Online boards in the Crime and Punishment section and advertise yourself as a noob wanting to fight. You will be picked up quaranteed.

EDIT: About the attributes. Intelligence and Perception are the 2 most encountered Primary training attributes, make them as high as possible, with Willpower and Memory as next highest as possible. Depending on the kits, Will/Mem may come out higher, just don't shirk Intelligence, and especially not Perception.
