I watched a few PVP videos, and it seemed like, in small-scale battles, it took a LONG time for players to kill one another. Is this the case? Not implying this is a bad thing, just curious.

depend of the players and their builds, i was able to finish some players in 5 second others in 5 mins
it all comes down to how good the players are. I could kill other players very fast or have a drawn out fight that can last a while.
If 2 glass canons meet, battle duration is very short.

Depends on a lot of factors, tbh.
2 really skilled players will generally last at least a good 15-30secs 1v1. Lots of dodging, countering, CC, healing, etc.
dps focused fights are generally pretty quick, especially 2 spike heavy builds going head to head.
support heavy specs tend to take the longest, and can drag out for minutes.
If you have more than 2 people fighting (1v2, 2v2, etc.) fights tend to go pretty quick.
I am going to have to go with it depends on the class and the players skill. As a Warrior I noticed some classes took a while to kill. Where as I went 1v1 on a mesmer and he was dead quicker than I expected like 8 seconds or so. I couldn't believe it. Probably depends on a lot of things as I said like player skill/class/armor... Overall I had fun especially the WvW that was the most entertaining to me as I love doing sieges. Played with one of my good friends and we had a blast.
