in Guild Wars 2
They are all labeled Europe, but the server I picked (fissure of woe) seems to have a large italian population, and I wanted a server with mostly english being spoken.
Any ideas?

Fissure of Woe is the "unofficial" Italian Server. Check the link above and you can check nationalities of guilds on each server.
Does it by any chance say 'overflow' on your mini-map?
I'd pick Ruins of Surmia if you want some WvWvW action. Low pop unofficial int. english speaking server.
Nice link, glad I picked up Gunnar's Hold, most guilds there have English as their main language
