I really enjoyed Shadowbane - one of the best games for open world pvp I've ever played imo.
But I suck quite admittedly at FPS games and Darkfall seems very much like that. My aiming is terrible - espcially against bunny hoppers.
So what class should I play if FPS aiming is not my thing?

It's hard to find a full loot pvp MMO - or even a semi-loot pvp, or even an open world PVP.....
What are you looking for, more specifically ?
Age of wushu is free (VIP options for various perks. Doesn't seem pay to win, more like pay to level faster), has open PVP a murder system, spy missions to go to other villages, patrols to go catch other people trying to spy (and kill them), a really cool tracking system to keep track of your enemies, an open bounty system....
Though the game itself is a little bit clunky feeling, it's not as clunky as DF:UW. It plays a more standard MMO Skill bar +targeting style of play.
Age of Conan offers (what I think) a very fun combat system that incorporates combos and such as well. They have a hardcore server that allows loot to drop from PVPed players within a level range (You can kill anybody, only people that are within your range will drop items). Doesn't drop all items....but I've certainly lost and gained various items from PVP. It's a very fun world PVP game IMO.
Outside that for world pvp...I'm not sure. I havn't gotten very far into Tera....but might be something to check out- though I know there is not loot pvp.
edit- Both games above are free. I've played them both and they both honestly don't seem like pay to win games at all. Pay to level faster? Certainly. You can play AOC to end game even...by then I hear getting a sub is pretty much required...but I figure if you play a game to endgame you probably like it enough to sub

Warrior seems to be a pretty good class for people to get started with. You have melee, which isn't terribly difficult from a FPS aiming standpoint as you don't need to be a perfect "aim". Then the abilities it uses are aoe style so no aiming required. The number one thing with the warrior is range, learning to get close. If you can't then there is the bow which does require aiming, however. All in all though, they've seemingly slowed the characters down from DF1 which is good for non FPS gamers and has brought a lot of complaints from the FPS gamers side stating that it "dumbed down" the combat.
My mistake - I missed the word class in your sentence.
The thought didn't occur because you don't have to commit to a class- you can change roles at anytime so just try them all and decide what you like most.

like previous posters said, Warriors take very little aiming- Especially with a polearm.
Big horizontal sweeps with your weapon make it hard to miss.
