Guess what? Its probably something different for everyone.
For me personally i love the combination of discovering a new class and exploring a new area with stories and lore. I prefer it when things are challenging and not a free run in rhe ballpark. Wether it be solo our grouped with nice likeminded people that also take the time to enjoy stuff. Even better so if it allows me to get immersed in my character and the lore. And slowly seeing a character grow, getting nice looking gear while helping other people.
i obviously hate repeating the same things over and over, like doing the same dungeon dozens of times... Or playing the 7 th alt trough the same area.
so what parts of an MMO experience do you like most?
Best MMO experiences : EQ(PvE), DAoC(PvP), WoW(total package) LOTRO (worldfeel) GW2 (Artstyle and animations and worlddesign) SWTOR (Story immersion) TSW (story) ESO (character advancement)

There is only one thing I look for when playing any game; is it a good story?
I don't care if its an MMO or not, give me a good story is all that I ask.

Do you like Deus Ex Human Evolution, Dishonored, and Bioshock Infinite?
Or better yet, go for point-n-click adventures. I am playing Testament of Sherlock Holmes, the story is good, and you actually need to think (if you don't read a walkthrough, that is).

I did battle with ignorance today, and ignorance won.
To exercise power costs effort and demands courage. That is why so many fail to assert rights to which they are perfectly entitled - because a right is a kind of power but they are too lazy or too cowardly to exercise it. The virtues which cloak these faults are called patience and forbearance.
For me, combat must be engaging and not the same ol' "I stand here while you hit me and then I hit you" thing.. But, minus all the pointless rolling around and dodging.. A Kung Fu legend I am not..
Exploration is a huge deal to me as well.. The bigger the world, the better.. I am not a fast travel fan, and always preferred to run/swim/ride/fly around the map and see things I haven't seen before.. AC was a good example of this.. While there were no mounts in the game, and some transport portals connected major cities, the very large landmass had to be traversed by foot.. Back then though, it was far from tedious..
My most memorable run was from an eastern coastal city to the only western coastal city.. 45+ real time minutes later with lots of running and screaming (Jurassic park joke) I made it.. Possibly considered a bit tedious by today's standards (I am very spoiled with mounts), but the experience was a blast and I remember it fondly..
