Say I wish to be a Summoner, and there are 50 levels in the game.
First I get Arcanist to Level 30, then sitch to Thaumatauge to level 15 (So now I am an effective level 45) and pick my JOB as a Summoner and level 5 levels as a Summoer to Level 50.
Is this Correct?

Every class starts at level one as they got rid of physical level back in the first version.
If you get to level 30 as an Arcanist and then switch to Thaumaturge you will be at level one as you haven't played Thaumaturge before.
Your class list will be the following:
Arcanist: Level 30
Thaumaturge: Level 1
Conjurer: Level 1
Gladiator: Level 1
Pugilist: Level 1
etc.
etc.
You will then need to level Thaumaturge to level 15 to unlock the quest to become a Summoner (if that's the secondary class needed). Then you will still be a level 30 Arcanist and level 15 Thaumaturge, but have the ability to equip a Soul Crystal to change into your Job which shares the level with the main class of that combination. You will then be a level 30 Summoner. If you take the gem off, you will become a Arcanist again. If you level while on Arcanist or Summoner, then you will be that level with both.
To switch classes all you need to do is switch to the weapon they use and your level will then be reflected. It could be thought along the same lines as switching fighting styles and how good you are with what you pick. If you are a master swordsman and suddenly take on lances, you won't be as strong as you were wielding a sword as you don't know any techniques or stances for it.
You are correct about being a level 40 Arcanist if you remove the gem.
Another thing to remember with the differences between jobs and classes, are the cross class skills.
For every 5 levels of a class you can slot a skill/spell from another class you have leveled in. So you could be a level 40 Arcanist with 15 levels in conjurer, and have about 3 spells/skills slotted in these cross class slots from that conjurer class as you run around as an Arcanist. So you could have healing spells on top of your Arcanist spells.
Or, even skills from a Gladiator class as you play a 40 level healer. So mix and match to make a more effective class.
Jobs offer very specific skills/spells, all which you have to quest for and be the appropriate level.
Also, Jobs don't get the cross slots every 5 levels like a class, they get them every 10 levels. So less choices there also.
So a level 50 Pugilist would have 10 cross skill slots available, while a level 50 monk would have 5.

Yes, the producer has stated that class skills are quite useful for soloing and dungeons, where as jobs are better for end game content/raiding.
Classes will be better when not playing in groups. This is because they draw abilities from the other classes you have leveled and the Jobs are limited in that fashion. For instance, Bards will have about 20% less DPS than an Archer if used properly in a group setting, but will boost the capacity and damage of their group to compensate.
Jobs will be given specific abilities suited for grouping up with other people, but will be unable to pull skills from most other classes. The classes will be the opposite and be able to take DPS boosting and defense boosting abilities that aren't native to their class for survival purposes.

You can acquire certain healing abilities (not all skills transfer to all classes), yes - however, you will heal for pathetic numbers since you won't be geared for it - but in certain soloing situations, it's better than nothing.

If you level up as a "job" do you gain a level for both the main class AND the sub class (almost like gaining 2 levels) Where as if you level up while only playing as a class, you only gain 1 level for that specific class?
the easiest method I use to explain this, think of classes as WoW classes, then think of jobs as WoW tree in the job... that's it.
the difference is that in FFXIV you will need to finish pre-request to get that tree in full ( leveling other sub classes), and rather than taking a long time switching tree, you switch by equipping a job stone which specializes your role.
now after understanding the above, you can mix and match between classes which I can not find something similar , but for this you have to remember getting cure from healer class will not make you OP healer because you need the gear and natural stats for it which you do not have and in some cases, they gimp down the abilities. for something that has 60sec CD on main class, if you use it on another class it will be 120sec etc.
there is FFXIVpads website which you can visit and mix and match what you want. remember though, for end game groups they usually do not take mixed and match classes but rather jobs for their specialized roles in groups.
