All races have the same number of total stat points, they are just allocated slightly different from race to race. The biggest difference you will find for any one stat from one race to another is 3 points. So even if you are a min/maxer it really isn't going to make a huge difference from level 1 to level 50 so play what makes you happy. :-)
In character creation, player chooses one of the combat classes (which also determines starting location). Upon completion of the level 10 quest for your starting class, you are free to join other guilds ("guilds" in FFXIV are connected to classes; what is typically considered a guild in other games goes by a different name), including crafting and harvesting guilds. Changing between classes is done by changing the weapon/tool you have equipped.
A few considerations. In beta 4 I created a Lol Marauder, as I liked the fun factor of playing a hobbit guard in LotRO. But FF little people are more like the animated dolls in It's a Small World at Disneyland than a short version of the race of man. For a melee class, barely reaching the knees of who you are tanking seemed like it would become a real visibility issue in tougher fights, so my plan is to reroll a larger class in early access.
Other considerations might include how much 'alting' you plan for your toon. If you plan to be switching a lot, a more average than maximized class could make sense.
But really it is most important to play a character you want to (exclusively) look at for the rest of the game. This is ironically the downside of FFXIV's all-alts-in-one approach. Just wish the elvish, larger humans and hulk-like classes looked better. Of course your mileage might vary.
...how bad can you screw up by choosing the wrong race?
It doesn't affect your class, but it does affect your stats, though the stat differences at level 1 are the same as at level 50. The largest disparity I saw between a single stat across 2 races was 6 points. That's about how much of that one stat you'd get on a piece of gear in the mid (level) 20s. I read somewhere that at most it can end up being a 2% difference in overall effectiveness at level 50 (and in practice it would likely be less than that). That's important if you are a min/maxer, but not really otherwise.
There are differences between the ethnicities too (2 ethnicities per race). One is generally better at casting jobs while the other is better at melee jobs. You can always choose a race you are pleased with aesthetically and compromise on stats by choosing the ethnicity that better suits your playstyle (skin color is usually the main difference, and that can be compensated for in customization options).
Luckily for me, a Miqo'te keeper of the moon was both a race that worked aesthetically for me and has the best stats for healing, which I'm focusing on mainly.
Ways to mess up your character: be anything other than a Hyur or Miqo'te (yeah, it can be bad).

Premium MMORPGs do not feature built-in cheating via cash for gold pay 2 win. PLAY to win or don't play.
