I am really torn about how to allocate stat points for my Arcanist/Summoner. Since I am going Summoner INT is a no brainer, but what about PIE and MND?
What stats should I focus on and how should I divide them up so I don't gimp myself?
(Also, I have zero interest in playing a Scholar so I am not worried about taking that job into consideration when spending points.)
Any help is greatly appreciated!

If you're not going scholar then there no need for the healing stat.
Im qurious too, do I need to invest into HP also as an Arcanist/Summoner?
I will do only PvE content solo and group whenever I can, I have no intention
to heal whatsoever.
So is a Spell Power + Mana hibrid sounds about right or should I include some HP?

This - MND only helps healing, and PIE is also mostly important for healers since it just gives MP. Summoners likely won't have to worry much about MP with their mana regen mechanics. You'll get all the HP and MP you need from your gear. Stack straight INT for your stat point allocation, all the way.
Don't let the game confuse you. The stat allocations are MUCH simpler than they lead you to believe.
Essentially, because they don't want anyone having a significant advantage over others, you put all your stat points into your primary stat, and leave it at that.
The amount of benefit you get from the stat points is very minor, and your primary is the one that gives you the most. The only viable alternative for Arcanist would be MND (if you plan on be a healer), else it's all INT. PIE is just +MP which you get from gear & abilities anyway, and won't help you much per point.
Isn't there something like diminishing returns when considering stats?
Is it worth to invest into one stat only?
I have my doubts.

No, there are no such diminishing returns.
There really is 1 stat that is more valuable than all others for any given class, to the point that it's better to just stack that. Stat variety comes automatically with your gear.
P.S. The decision might or might not be somewhat more complicated for tanks, but DPS is very straightforward.

Tanks are mostly just all STR. Same as all the other classes (just pump everything into your primary). The one exception being MAYBE Marauder, since they are a soak tank (need more VIT), but you can get that from gear, so it's still debatable.
- As twrule says, though. Stat customization (from points) is so pointless in this game, there have been debates on the forums as to whether or not it even needs to be in the game. Because, for the most part, it's nothing more than a feature to confuse new players & potentially cause them to ruin their characters.
That said, there is a respect scroll u can buy from your Grand Company (once u unlock the rank for it), that I believe is ~10,000 seals. Which isn't that hard to get once you start doing the higher lvl FATES.
Why is this even a question? It was IMPOSSIBLE to run out of mana as a Arcanist. I can understand THM wanting piety for more mana but Arcanist? That's just laughable. They even had a drain spell that gave you more mana back and i believe the Aetherite spell increases mp regen didn't it?
Arcanist go Int all the way. Anything else is stupid.

i'd say not just tanking classes, i can see a case for THM wanting to split int and pie, raising their mp enough would mean increasing their burn phase of their rotation which means longer time of doing more damage before they run out of mp and have to go into the recovery phase.

Presumably there is a cap on each stat ?
I can't think of any game I have ever played where that did not apply. The cap is usually only of real importance at max level, but it's always there...
even if there was a cap that changes nothing. you just move on to the 2nd best stat. Int > Piety. If the cap is low enough to max more than 2, Int > Piety > Vit.
Still a no brainer. Still a pointless feature to have in the game.

honestly this stats system seems unnecessary, they could just have left customisation to gear choice.
This only makes me feel restricted when swapping between jobs that have the same/similar base classes.
Put it all into INT.
MND is a healing stat, and unless your playing scholar you should ignore it.
PIE in more total MP. But as an Arcanist you already have several abilities (Aetherflow & Energy Drain) to regenerate MP.
