Is this game going to be a space ship flight simulator like EVE or is it actually going to have alternative gameplay mechanics for running around in the game world on foot as well? And what level of character customisation is there?

In short, yes
Yes, This is basically a FPS game at it's core with a very complex vehicle mechanic. So yes you will be able to walk around on planets, stations and even on your own ship! The game goes way beyond the cockpit. As for character customization.... Yes but to what extent we don't really know yet as they haven't gotten that far into development at this point.
