A few question about builds. I know Zenimax is all about customization and letting everyone be whatever they want...but I'm a tad bit worried about this.
Will hybrid or unorthodox builds be less potent than focused cookie cutter builds and thus seen as a liability in groups?
Is it best to stack a certain stat if you want to be a certain role (healer, melee, ranged, tank)?
Can you reset your stats if you mess up?

As far as i can tell, unorthodox can work great, you just need to build your stats around the build.
Stats can be built up by equipment and enchanting, not just the attributes, and there is a soft cap with diminishing returns, so keep an eye on that and don't waste points where they aren't needed.
All class skills are Magicka based, and weapon skills are (for the most part) Stamina based. Keep that in mind, because even if you are thinking your character is a melee character, you may be using a lot of class skills which are magicka based. Don't just blindly throw points into an attribute because you think that is what your character is supposed to use. Pay attention to how you use your weapons and abilities and adjust your build on what you actually use and need.
The skills system should allow you to make a lot of builds, even with the lack of mechanics and proper class me chanics.
Hybrid builds are, atm, pretty mandatory because specialized build has a disadvantage. (By hybrid, I mean that the build can handle 2 roles with 2 differents weapons (Destru staff + Resto staff for example)). There are no real stats in ESO, just the mana/health/stamina thing, it will depends on what you want to play.
And yes, there are respec altar (they're pretty expensive, though)
