I'd like to see what other gamers think about this. Preferably trying to keep it to games released after 2000. Also, I didn't list the bethesda Fallout games because I consider them a scifi version of TES.
Considering I've only ever heard of Fable and Two Worlds, I went with Two Worlds. That game was a great open world RPG, at least the first one. I hear the second one wasn't as good.

That's interesting. I have not played Two Worlds 1, but have played Two Worlds 2. I enjoyed my brief stay there.
When I upgraded my PC a year or so back, I lost my Two Worlds 2 game as I have never been able to get it working on my new PC. I've tried all the "tweaks and twiddles" that I have come across, but it still does not get past the splash screen
I have played (on the list): Fable (briefly on X-Box 360) Kingdoms of Amular (briefly on PC) Arx Fatalis a lot (on PC) Fable and KoA I just could not get into. Arx Fatalis, while a great and fun game, is nothing like TES. It is very linear and very non-open world-ish.

Where is Dragon Age, though that may be a stretch, too?

Personally the only modern MMORPG trend that annoys me is the idea that MMOs need to be designed in a way to attract people who don't actually like MMOs. Which to me makes about as much sense as someone trying to figure out a way to get vegetarians to eat at their steakhouse. - FARGIN_WAR
Maybe throw Dragon's Dogma on that list I have been meaning to play it but so many other things in my backlog. It tends to be compared to Dark Souls a lot in terms of difficulty and combat while being more open like TES and other big RPGs. Only bad thing I have heard about it is the story gets pretty meh and the occasional bugs here and there.

I wish they had that for the PC. I've heard many people saying good things about it. I just can not play RPGs on consoles.

Wasn't Darkfall shut down? Or are you talking about Darkfall: Unholy Wars? I've read that DF:UW is only a shell of the game that the original was.

its not as good or better than DF1 depending on what you want. However UW is far from a 'shell' of a game.
The only thing bad about the Darkfall games is the community, I think its the worst out there
