From what I have read, it seems that the points that go into crafting are the same points that you use to put into abilities. Is this right? So, if I make a crafter then I come up short in nuke power? Could someone confirm this? If that were the case, it seems like the only good alternative would be a dedicated crafter.

Yes. if you plan on having all crafting skills on one character you are hurting yourself. But specializing in one will not hurt you that much.
I think there are around 300+ skill points up for grabs at the moment. Using skill calculators all the skills I would want with 2 weapons and 1 crafting profession came to around 96 points. Theres definitely some wiggle room if you go for all of them.
Saying that though you would probably want to save some for future skill lines.

As someone doing all crafts, my advice is if you put it on one character, always remember you can undo all your skill points for 100 gold per a skill point with a reset. When you are first starting out, I would dump your points into all the crafts you want to take, but keep in mind battles will be much harder without other combat skills. your going to want to max out the crafting research skill points, which allow you to research more then one item at a time. once you get every trait researched you can do a skil point reset and reclaim all those points back later on.
For now I have spent all my points into crafting, and leveling up my combat levels very slow for the time being. You may want to only save your points for only the main unlocks and the research unlocks as points will be really tight as you level up. once you get level 10, you can hit cyrodiil and grab up all the pvp skyshards for a nice boost to your skill point pool.
Also wanted to add, keep in mind when you get to Adventure Zones, you are guaranteed 1 skill shard every time you do an Adventure Zone. So ultimately you will have unlimited skill points. Its going to take a lot of work to get them all though at end game. If your not happy at end game with your skill points, just do a reset until you obtain enough to dump back into crafting.
