May I recommend The Sims Online. Hehe. I actually had to check their site before I posted to make sure it has not been shut down yet. I assume the only player killing you could do is by burning lunch and not running out of the house when it starts on fire.

You could always rent Baldur's Gate for console and invite a friend over...if you can't find a game with a PvP that is made for carebears, then I'm not sure if you consider the AI as a player or what...

EvE - Totally open ended, you choose what to do, where to do it, and when to do it. That includes PvP. Amazing depth to the game, including the "carebear" stuff. You can play it for a lifetime and never be in any danger of being killed. It is up to you. Read the EvE forum sections of this site for a better balanced view, from those who have actually played it, unlike some of the idiotic replies about it above. Better yet, it has a free trial, just go and try it for yourself. My game of choice for anyone with a brain, and a RL, like a job & family.

Judging by her post, there are two prime options for the original poster. Everquest 2 and World of Warcraft on a PvE server. Both are quality products and differ in style for the most part.
WoW has a cartoonish appaerance and a general light hearted approach. Very solo friendly and relatively easy, well suited to beginners. The immature community is somewhat of a problem on many servers.
Everquest 2 is more serious and "realistic" ( as much as you can say that about a fantasy game ). Very quest oriented, soloing is very possible, grouping and joining a guild is recommended though and very rewardng. Very good community, the company behind the game is somewhat erratic at the moment.
There are a couple more you might consider:
Dark Age of Camelot: Aged game, still the prime PvP game on the market, the combat system is pretty good, PvE overall far behind the two above mentioned games though.
Guild Wars: PvP is completely consentual, but the completely instanced system is quite antisocial and the story campaign is pretty poor.
City of Heros/City of Villains: Great style, unfortunately you have completed the best part of the game once you created your character. The actual gameplay is fun at first, but extremely repetitive.
Saga of Ryzom: Great landscape, skill-based advancement, exceptional but very small community. The game itself has some substantial problems unfortunately.
Anarchy Online: Great game built on a faulty engine. One of the best combined ( level and skill ) based advancement systems to date. Community is alright, once you leave the free account areas. Graphics are aged. Very high learning curve, but rewarding in the end. If you like questing, stay away though.
Can anyone recommend a game where the pvp/pk is limited, but the rest of the game is still a good mmorpg with quests and monsters and leveling, and crafting and socialization?

oh thats funny, because when I ask any EVE player "whats so good about EVE?" then 99% answers: Because of the real non-carebear pvp. are you sure we're talking about the same game here?
and FYI, I did play the game. not long, but enough to see what the game is all about, and a very big part is the pvp. and that pvp also includes pvp. your still in your free trial or something?
Im a current subscriber. This game is placed among other hard core PvP games and its not a carebear friendly game. It is totally non-consentual, and the penalty for death is extremely harsh.
You wont be joy-riding in .5 space and below to think if you lost your ship, you'll respawn in a station with the same ship waiting for you. If you dont belong to a corporation, a ship destruction can set you back weeks. A pod destruction can set you back several weeks as well, and is typically more harsh that just a ship destruction (some implants run in the hundreds of millions and you lose these on destruction of your pod)
the game is about control, PvP exists even in the market in other forms. You wont make a good trader if you cant step outside of .5 space. In fact, doing simple agent missions will have you travelling to unfriendly space. Miner sounds safe? Not. To mine decent ore you need to travel to .3 space, where belts are regularly policed by player-pirates who will demand millions of ISK from you and you either give it to them, or they destroy you..your ore..your pod. Give it to them, and they still may do this.
so, end of discussion. the guy is here to ask for carebear "friendly" games. this is not one of them. so lets get back on his subject and quit debating wether or not eve is "carebear friendly", because thats the last thing it is. (you would have been better off suggesting lineage 2 than this game)

Anarchy Online is very nice in my opinion. Death penalty is basically being "rez sick" for several minutes. I've never been ganked by PK-ers, even in the PVP zones. Enough people are polite and helpful that the smattering of asshats isn't that troublesome. LOTS of professions with different roles, and each profession can have 2-5 different possible choices to make that will impact gameplay.
So far, I've only had one person try to trick me into attacking them while they were "flagged" (allows pvp combat anywhere).
The PVP in AO seems to be focused around duels, tower wars, and (on Rimor at least) controlling the super-dragon raid Tarasque.
