I m following this game for years and today is the official launch... i would like to ask, if they release new servers, how can i claim land in safe zone? What should be my first move? Do i have a chance?
If they dont open new servers, how can i get land and a house later in game?

Follow your green quest as fast you can, get the scarecrow, place it in available zone.

I'll elaborate a bit on what was stated.
As said above, you will need to be a patron (subscriber) to claim land. Though take note, you can still plant crops in the open world without being a subscriber. You'll just have to work at hiding them from other players, as they can steal from you. Also, if you decide not to patron, you can share farms with willing guild members or friends. For example, I have 2 f2p friends starting today. My friend and I will add them to our "Family" and giving them access to our plots of land. Having multiple people on one farm can be a good thing, as having more people to tend to whatever it is you're growing is always an advantage. For example, my friend will plant crops and harvest on my plot while I am away.
If you decide to patron:
Follow your green quest markers until they give you a small farm. If you continue to follow the green quest markers, you will gain GIlda Stars. Having 15 of these will afford you the deed of a house, which you can obtain by heading to Mirage Island. (Portals in each town next to the auction house guy)
Having both a farm and a house allows you to claim a good bit of land. Land you can repurpose later into a large farm if you like. You'll want to join an active guild to obtain your large farm, as the quest line is not easy, and the final trade route you have to run can be treacherous.
Now, as far as claiming land, you'll have to do some searching. I recommend joining a guild for this as well, as at least in my case, my guildies are always on the lookout for open land. We often find it in Gweonid Forest, Cinderstone, or White Arden. Don't be picky, as land is a premium and the main resource in the game.
Don't be discouraged if you can't find any available land right away. It's out there. Good luck!

Can you still earn Gilda as a F2Per? And spend it on other rewards? Or is that currency completely off the table?

What this poster fails to mention, is that if you get disconnected at any point during the rush, you will have to requeue, and you will not get land by the time you get back in. This is exactly what happened to me in prelaunch, and I guarantee it will be worse today.
Sucks to be you but no, not anymore. As of last night there is a new disconnect grace period - you have about 5 minutes after any type of disconnect - even one you did on purpose to reboot Windows or whatever - to re-log without a queue. Would have been nice if it had been that way right from head-start but at least it's there now.

Nice of them to do that after hundreds and hundreds of people got screwed. Still does me no good, my guild is firmly entrenched on Kyrios, Im not lookin to play this game solo on another server where my friends arent. Hurray.
Perhaps, but in order to be competitive and to keep up with the pack so to say, you had to get land at the start. There is no arguing that. You could immediately tell by day 3 just by looking at how nice their gear was who did and didnt own farms.
Just give it up, you've lost already... you've stated as much again and again... you will never be one of them... it's too late. Game over.

I'm fairly certain (Please forgive me if I am incorrect) that you will still earn Gilda Coins just like everyone else. Via questing, dailies, and trade routes. The big limitation (among others) that a free to play player will face is that they will not be able to pay taxes on land. Meaning that while you can purchase your house and obtain/upgrade your farm, you will not be able to place it. So your house and farm will just exist as items in your inventory / bank until you subscribe.
So in my mind, the best bet is to play for free until you hit a point where you're enjoying yourself enough, and find a plot you want to claim. At that point you could sub, and place your house/farm.
Now that brings us to the other use for Gilda Stars that I know of - Ships. Building a ship requires Gilda Stars, but I do not believe it requires tax credits. So a free to play player SHOULD be able to construct ships.
If anyone has further clarification, please feel free to pitch in or correct me.
