I have a group of 6 friends that I play online with every week.
Half of them have real life commitments, and so can't commit to any gameplay outside of our usual game time.
So can we start up a party of 7 and level them up together as a single party. We play together on TS, so it never quite works to try to play a game as two separate parties.
And if this is viable, what type of gameplay should we be looking for? The normal story quests? Dungeons?

Light party = 4 people,

Initially when you first start the game you need to follow the main storyline for unlocks to the game and do your typical quests. Fates (Dynamic Events of Sorts) can be done solo or in a party of up to 8 people. Dungeons are usually for 4 people. Raid and Primal Groups are usually 8 near end game.
For leveling up, it could be an option if you formed FATE groups with full parties since you all share the EXP.

Can you start any of these from level 1 and would it be a fun way to level up?

you can do fates pretty early in the game, and can be fun. The problem is they can get very repetitive, also you won't get any gear out of them so that could really slow you down.
one of the great things about FFXIV though is that each class is leveled on it's own. So if half of the group has more free time they can level up alternate classes and only play that one class with the group.
Dungeons will be harder to work out, as previously stated they are set up as 4 people until the end game stuff.
At the end of the day though you and your group of 6 people should be able to have a lot of fun questing, and there are a lot of things that can be done on the side while the whole group can't play to help add value to every ones free time.
As a tip if you guys enjoy crafting make sure you guys pick your focus. one person could do it all, but it was designed for people to work together. For instance just because you want to make metal armor doesn't mean you won't also need leather to make your gear.

Short answer is no.
You can form fate groups right away but there aren't enough to level just by doing those alone. You also have to keep in mind that FFXIV gameplay picks up as you advance so levels 1 - 20 are your typical lame themepark type quests.
You have to keep in mind that most MMOs have small group dungeons in earlier levels 4 in FFXIV, 5 in WOW, 5 in Wildstar, 4 in ESO. You could form 2 groups and pug 1 person to fill the 8th spot. Yes you would be running 2 different dungeon runs but as long as everyone is in vent or TS the experience will basically be the same.
You can start doing FATEs pretty much as soon as you get out of your starting city into an adventure zone; their nominal level ranges from 3 to 49 (50 for some rare-spawning world boss events).
"Dungeons" in ARR are with a couple of exceptions (both at the end of the original main story quest chain) 4-player instances. 8 player full party instances are all max level content. Dungeons start at level 15, in general you get a new one unlocked every 3 or 4 levels, mostly through the main story quest.
Three of the Primal fights have 4 player "normal mode" versions which you do at levels 20, 34 and 44 as part of the main story quest. The rest of the Primal and other "trial" fights are level 50 content for 8-player parties.
There are two sets of raids; Coil of Bahamut series which is designed for a single 8-player full party, and Crystal Tower series which is designed for an alliance of three full parties. Again this is all max level stuff that you have to finish the original main story to unlock. Crystal Tower is easier as it is tuned to give a lot of margin for error, has a lower gear-check element & most fights can be explained in a few sentences. Not being part of a raid guild or static I've only done the first few parts of Coil so can't really comment on it.
FATEs and dungeon runs are viable ways to level up; whether or not they're fun I guess depends on what you like.

No, you can't level up together, fates don't offer enough XP to level up. There are few fates that offer you a ton of xp, but its like camping an NM in FFXI, the spawn times are long and the fights are laggy due to many people(solo) spamming the same mob. Was fun during beta, but not as a means of leveling up.
Basically if you were to level up with 7 ppl using only fates, you would have no gear, and when moving from different tier fates, would not put out enough dmg for the mob, also there are level restrictions on fates, so your contribution may not gain you the max xp. The smaller fates for 7 people would not net you guys enough experience points to level up, I'm assuming to max, but it wouldn't even be adequate to lvl 20.
Basically, you guys would solo until 50, solo missions, solo spam quests, and solo job quests. Your not even allowed to be in party while doing mission or job quest, you have to drop, unless its been changed idk, I refuse to pay for this game to know. I do know it sucks to drop from a party of friends who your chatting with to do a job quest, ugh. In FFXI, me and friends were always in party chat while doing things, even though we had ls chat as well, these were close friends, like yours im assuming.
But wait, someone will say HEY theres dungeons! lmao, sigh these people, story dungeons only allow four players, somone would be twiddling their thumbs while you guys kill tons of trash mobs, which isnt bad, they could watch walking dead or something right?
But those raids aren't until you guys reach 50, and then guess what? thats it!!! you just run instanced dungeons, dodging indicators on the map that make people think theyre skilled players because they can run out of the way of an indicator lmao,
bottom line, if you wanna play a game with your friends where you get the full experience, try another game, OR lol I could explain how you guys could play ffxi all level together, do missions, quests, gear quests together, and have a great experience, but i'll just stick with, find another game thats coop friendly

I was grouping from level 15 to 50 and beyond so telling lies too I see. Typical hater modus operandi.
Hmmm well for starters, FATEs are one of the main ways of leveling up, especially for alt classes, In fact before they increased dungeon XP gains it's what most people did to level up extremely fast. SOunds like you don't understand at all how FATEs and XP work either. If theyre in a group together they all contribute to their reward level. As long as you hit something once, and your group overall has contributed enough to get a gold rank then everyone in the group gets the max.
Now dungeons tend to be a bit faster, but only if youre with a competent group that doesnt slow things down and wipe a lot. Dungeons can also get you some nice gear along the way. You will also need to clear most dungeons at least once anyway to get your story missions completed and unlock some endgame stuff.
Also nothing is stopping them from forming 2 groups to run 4-man dungeons with. But I guess that takes a bit more common sense than complaining that the game doesnt cater specifically to a group of people with X number of players. Because you know, everyone has the same number of friends that all play the same games at the same time so it should be easy to make every game suit every scenario possible....
Dungeons are the most effective way to level up. You can do them with your friends from 1-50. End Game can be done with a group of friends.
There is nothing that prevents you from playing FFXIV with 7 friends.
Except all of the dungeons up until 50 are for only 4 people. And dungeons are the most efficient way if you have a full group's worth, or you're queuing solo as a tank or healer. DPS queues tend to suck. If you're a solo DPS, you're better off doing FATEs or Leves.
