I've been looking and trying numerous games for the last couple of weeks and I can't find anything that's really stuck.
At this stage, I'm not too picky as to how the game plays, as long as it's something that keeps your attention and keeps you wanting to come back.
I've some preferences, but none of these are essential: Medieval Setting, realistic graphics, shapeshifting/animal forms. I don't really care about prices etc, but pay to win isn't a positive. Betas/Alphas are okay as long as there's no planned character wipes. I don't really like sci-fi at all. Ideally, I'd like a 3rd person game. It's important that the game has an active community.
Stuff I've played: GW2, FFXIV, TSW, Rift, EQ2, ESO, NW, Tera, DDO, WoW, Aion, Mabingoi, Project Gorgon, Ryzom, AoC, Forsaken World, SWTOR, Mortal Online, a bunch of others I don't really remember.
I'm really after something that won't eventually feel like WoW, if at all possible, which is a big ask I suppose. I've played a lot of MMOs over the years and I feel like I've hit a wall here (yet I'm not a fan of any other gaming genres in general).
Any suggestions would be appreciated.

I feel your pain and share it. Just cancelled my subs for EQ2 and will not be going back. Been looking for something else for a long while now but nothing takes my fancy.

Regarding PoE and D3, I really want the community more than anything and those games just don't have it. They're fine for a grind, maybe a taste of the story, but other than that are rather uninteresting. Diablo games were never something I got into as much as my friends did.
As for why I didn't like the major games - they all feel too much like WoW. ESO, FFXIV, WoW - it's just themepark quests. I hit VR10 TWICE in ESO within the first month of release after finding out Templars were worthless for anything but healing; I burned out on quests, the same applies to the rest - FFXIV, I hit level 49 before quitting because there was just too much fate grinding. GW2 - It was the RNG - I threw everything at the mystic forge and lost while my friends succeeded; I'm not interested in being rewarded by chance. There's a variety of reasons and nothing's going to be perfect so I figured it best not to list them.
As for LOTRO - I've never actually played it. Is it worth playing? I'm not hugely into LOTR (Only seen the first movie) - is it worth playing if you don't really like LOTR?
As for Defiance, I can't really say I ever want to play something run by Trion after suffering through Archeage.
Edit: Never really got into minecraft, and Trove is run by Trion but I suppose it might still be worth a shot to pass some time. I don't strictly hate Sci-fi, but I can't really get immersed or invested in anything fitting that genre, and I'm after something I can spend a lot of time playing.

Lotro, imo, is just like wow for the most part. Nothing more than a shit ton of quests to do. There's some decent story in there but if you don't know the lore or anything you won't care. It is free so you could always try it out but it's nothing different than anything else you've played and didn't like.
Nosgath is something a little different humans/vampires, but more matchmaking then MMO
Have you tried Wildstar ? Other than that you seem to have tried pretty much everything I have, and im in pretty much the same situation, I stopped wow 4 weeks ago as im going away with work soon, so I figured theres no point carrying on when my characters gear will be so low it wont matter.
Theres also The Repopulation, its strictly SCI-FI so prob not your cup of tea
As a poster above said, if you don't really care about the LotR background, and also don't like the listed games because "they all feel too much like WoW", then maybe LotRO is not a good pick for you. Without LotR it's pretty much like wow. True, with a great community, lot's of roleplay and events, and an awesome music system but still, gameplay-wise you can find elements which would remind you of wow, and as you said in OP "I'm really after something that won't eventually feel like WoW"
Defiance: While Trion burned themselves with AA, that doesn't change the fact that Defiance (and Trove too) is a cool game... but I can't say anything about the addiction factor (I rarely play Trove, Landmark suits me better, and likewise I play Defiance only when something new is added or if I'm in a mood for some shooting fun).
If you like the show, give a chance to Defiance, the concept (with meddling the game and the show, story-wise) is nice and pretty unique. Since it's free, the worst case scenario is that you play through the game for checking the story, and then uninstall
I did buy and play Wildstar to about level 20, it was okay but the frequent uninteresting quests got the better off me and I lost interest.
Regarding LOTRO, I guess I'll give it a pass then; probably no good going into a LOTR game not knowing an awful lot about it, especially if it's similar to WoW in terms of gameplay.
As for Nosgoth - probably in the same boat as Trove. Something I'll look at at some time or other, but I'm still looking for a MMO to fill the void.
Defiance keeps popping up but it's not really something I want to play, I think.
As for the Repop, isn't this in early access right now? Does it have character wipes? I bought SotA but I've been avoiding playing it because of the character wipes / not wanting to ruin the final product. I don't really like sci-fi, no, but my options are rather limited right now at least.
Once again I appreciate the suggestions. I guess I've got to wait this one out; there's some interesting upcoming games at least.
Oh right I forgot about Gloria Vicitis. Any idea if it'll have character wipes?
I suppose at $10 I might as well check it out.
