I've a few friends that are more or less stuck playing this game.
I played around release, and hit level 48 before quitting due to the amount of grinding required to finish leveling (Quests largely dried up and fate grinding was all that was left besides one dungeon that I'd done to death).
I tried the game once again recently, but quickly became frustrated at the intrusive main story (that and the needlessly long GCD) which required you to run back and fourth between locations for a story I didn't really care for. I really don't have the patience for this kind of thing unless I'm invested/interested in the game.
Basically, though, I just want to do dungeons with my friends and skip all the tedious leveling/plot/quests along the way - is there a way to speed up this process? Most games have methods of increasing experience gain in some form or other, does FFXIV?
Also, is it possible to skip the main story? I recall a lot of the dungeons/bosses required you to have progressed through it first.

FFXIV is a story driven game. If you want to do any of the endgame content you have to do the main scenario to do anything ie. Primals, Coil raiding and pvp.
The GCD is as long as it is because that's the style of combat the devs wanted, 2.5s GCD with off GCD skills to weave in. Plus it actually allows for some awesome animations.
After getting your first job to 50 every subsequent job will have a 50% XP boost permanently.
It pretty much sounds like you have no interest in the game itself but just want to play it for the sake of playing something with your friends. I'm not sure if that's going to be enough to help you get through the grind and tedium of FFXIV.
You'll need to complete the main story to unlock a number of dungeons/raids/bosses so not really. On the bright side the main story improves quite a bit after level 50... less running around making stew for people...
The low level roulette is extremely good exp but only gives the big bonus once a day, there is also a guildhest roulette for decent exp that is very quick.
The hunting log is also some pretty amazing exp at low/mid levels.
Unfortunately I still think grinding fates is still the fastest way to make exp that is not capped in some way. Grinding dungeons might be competitive now but you'll need a tank or healer in the ground to avoid the 20-30 minute queue.
Personally I think the 2.5 second GCD was poorly thought through. If the wanted to make the GCD that long they should have made the classes noticeably more complex than games that have a shorter GCD or added in some sort of group dynamic like FFXI had.
For people struggling with the GCD and want to dps I recommend black mage as you're casting all the time rather than sitting around doing nothing waiting for the GCD to come off of cooldown.
Edit: Bard on the other hand feels the most painful and I would recommend that the least for people used to faster combat.

I recall enjoying healing the dungeons when I played earlier, but I'm not really interested in jumping through so many hoops to get to the fun stuff; I was hoping there might've been some new methods around it (I really only wanted to play it on the side).
Edit on the GCD: Yeah, playing a white mage or whatever it was less noticable. Trying to play the.. axe class a few months back was extremely boring. It's less of an issue than the integrated story, though.
You should probably just give up. Seems like this is not the game for you.
Bard is the most recommended for new players. It's the easiest to learn cooldown weaving with, as well as having the most off GCD abilities it's the fastest combat while being able to move at the same time. It has just as much activity as black mage.
