I initially did not like Rift, but I finally forced myself to play to level 10 (along with adjusting the graphic settings as much as possible. I have everything maxed and it still looks a little ugly to me not sure why...) Anyway I am really enjoying it so far, but it is a LOT like WoW which I am comfortable with.
I got burnt out with Archeage pretty quick, and I kind of liked Tera but it seems like it lacked substance. I'm excited at the possibility of doing some fun end game raiding again.

I can't believe more people aren't suggesting FFXIV ARR. I'm an old school gamer and was looking for the exact same thing as OP and it fits perfect. combat is not twitchy, the community is alot more mature and friendly than any recent mmo's I've played (WOW, TSW, RIFT). It is a themepark, but with a really laid back feel. There are even crafting classes that do nothing else. Player housing, grow some crops, raise a chocobo...
One character and you can play all classes.
I play at my own pace and never feel rushed. About two months in, and just hitting cap on my first class.
Anyways, I'm loving it, and I'm not a FF fanboy, in fact, the only other FF title I've played was XI, I know nothing about the lore lol
These are not in any order, the ones I play are Ryzom and SWG Emu for crafting and immersion, and Warframe for run n gun-ing.
LOTRO - tried and true, though not sure how needed crafting really is, I know you have to grind for top end gear...big battles, rep grinding etc.
SWG Emu - most if not all old gamers know how SWG worked. Grinding for rare drops but not pvp based. Crafting matters.
Eve -(Not F2P) mission grinding, but crafting certainly matters and you can avoid pvp. But not being able to move around or interface with others outside of your pod gets bothersome at times (at least to me).
TSW - engaging but horror based, crafting is ehhh but the game fun combat and quest wise, large gear grind though.
FFXIV - (Not F2P) fun themepark mmo, with nice story quests and crafting is decent. gear grinding though.
Ryzom - older like LOTRO, but crafting is huge part of the game, pvp is avoidable. 1 Character can pretty much do it all. I loved the fact you could craft all your own gear and customize your spells or actions.
Landmark - I had fun but it was basically minecraft with 3d graphics, I heard they added PVE aspect but have not tried it.
These are pretty much all the ones I have spent time in...I played Rift as well but some reason I can not get into it and the gear grind I had ahead of me as a turn off.
Waiting to try The Repopulation, heard some good things and some not so good things but it is still alpha so keeping an open mind.
You know you are old when the dev's on the games you play are almost young enough to be your grand-kids.
It always makes me laugh a little inside when someone mentions wanting a relaxed game and then mentions grinding in old school games. I played Everquest for 3-4 years completely relaxed, took my time with everything and enjoyed every minute of it. It's mostly a mindset.
I don't have any suggestions for you unfortunately, as I've been looking for something to play myself for a while now. Sorry if this wasted ops time
Whenever I want a more relaxed mmo I go for the ones with boats and have a nice time sailing around the world. Currently uncharted waters is probably the best of these. Does have pvp areas, but never had anything happen to me in them the few times I've gone through.
Also as others have said eve could be a good one, but will take more attention at the start while you learn what not to do.
Wurm online there is NOTHING close to it, amazing crafting, real sandbox lots of exploring you can spend most of your time setting up a property just the way you want you can raise your own dogs and take them hunting.
There is a free trial so you have nothing to loose it is the only true sandbox game i have seen.
I have spent hours digging my own mine and making a forge in it as well as putting a door on it to keep out players everything in the game is crafted, i spent a 3 months making my own island no game i know of can do that.
There are 2 types of servers pve and pvp so you are not forced into pvp you can make buildings the way you want them to look there is more freedom in wurm online than any other game i have ever played.
You can breed dogs and if your lucky get a champion dog which is much larger and has much better stats you can force them to attack they will also defend you.
GW2, Lotro, ESO and FFXIV. In that order as FFXIV does have a raiding and dungeon endgame but so much other stuff to do that's it's worth at least trying.
