In your opinion, which dungeon is the easiest and more important - the fastest one to get 100 Tombstones of Soldiery?

You really can't go wrong with the main scenario, ideally the daily roulette main scenario which can give you up to 240 soldiery if someone is new.
That being said, running every dungeon for the first time already gives you a bonus and you need to do them anyway to unlock the higher roulettes, so I would focus on that.
