Asheron's Call is the easy obvious choice to me, but since nobody else mentioned it
Horizons/Istaria: Develop that game to it's fullest potential and I never would leave, multi-classing that rocked, crossover skills, insanely deep player crafted only system, mobs only dropped resources and recipes. Player built cities and towns, bridges that had to be built by the entire community in order to unlock a new area or even better a new RACE! Crafting class only viable, burden that mattered, trade mules and transport mules and one must not forget PLAYABLE DRAGONS that you had to collect gold and treasures to build your lair. Completely different game play as a dragon, and seeing a higher level dragon was an amazing accomplishment. Consignment on the AH, it goes on and on. Still one of my favorites as it, but needs a reboot
Hellgate London with todays tech and non-instanced crap. Also B2P.
I would also play a PvE based WAR reboot with all the quirks polished and improved... and also B2P.
SWG Vanguard Ultima Online WoW Darkfall Asheron's Call Anarchy Online
Games that had a lot of potential but didn't quite hit the mark or games that are old and need a fresh reincarnation. All of these would need new developers of course. The fun-loving hungry creative talent, the technical know-how, and the funds necessary to make a game ready for prime time in 2015 don't seem to be able to match up with each other.
I want SWTOR with state of the art graphics like Black Desert Online or Battlefront featuring an action-based combat system (like B&S or Tera)... keeping up the quality storytelling and mixing it up with the tons of features from SWG! Would be a splendid mix!
Imagine action-based lightsaber fights that actually look great!!!
None. MMOs need new ideas not a rehashing of the old just so we can remember why those old things went away.

SAO using oculus rift and the latest techniques for a openworld with deep AI/crafting/combat system with randomly generated dungeons based off entering the instanced dungeon.... However, only raid dungeons should be instanced while everything else should be open world. We want Directx12 graphics with it being SLI friendly. Got to be an action mmorpg though. I'd like to see it using cellshading techniques similar to Naruto Shippuden: ultimate ninja storm 4 but engaging enough to feel the immersion via oculus rift instead of just being thrown in a game. Think being thrown in a shadowy medow with winds swirling around and looking around, but wondering how amazing the graphics are and how in-touch you'd feel because of the dynamic physics being used with how things are moving around while keeping the color profiles within normal limits so it doesn't feel all like easter.

Except the game i love has not gone away ,it is still here :P after 13 years. It was however made to work on the PS2 so yeah it could definitely use a redo and i feel it would do quit well but would never happen because then it would kill FFXIV.

City of Heroes - straight re-launch, or if a change is necessary per the spirit of the question, updated graphics/engine. The Chronicles of Spellborne - not sure how to change it other than the standard graphics answer - maybe better dev support and/or marketing?
My list : Ultima Online, Asheron's Call, SWG...and bring back Auto Assault, dammit!
Throw in Anarchy Online if they brought back the non-combat politics and progression (which they dropped before even implementing).

DAOC (All the way to it's current state minus TOA) Anarchy Online (Up to point it went F2P) Earth & Beyond Kingdom Underfire 2 Phantasy Star Universe (Yes I know not a MMO) UO or preferably UO2 (Still mad about UO2 being canned) Dragon Empires (Still mad about it being canned) Mythica (Still mad about it being canned)
In War - Victory. In Peace - Vigilance. In Death - Sacrifice.

I had said Anarchy Online, but I'd also like to add CoH to that list.
I did have a lot of fun with my Energy Tank. What the hell was that attack called again? The one with the pink pompom Bitch-Slap?
Warhammer Online is the correct answer.
I've got a feevah, and the only prescription... is more cowbell.
