Some knowledgable people chiming in here, so 2 questions:
For a stamina sword/shield, what class and race would work best to support that?
What would you say is the most fun magica class/race combo you have played?
Racials are % based so they will only provide mathematical bonuses they won't affect the way you enjoy your class, for mathematical advantage tanking with an imperial or redguard is the best, being a magicka sorc and nightblade with an altmer is the best while being a magicka dragonknight with a dunmer is the best course, on the stamina dps side being a redguard and a khajiit are both the best choices since all the other races don't have mathematical bonuses as strong as this two for stamina. Overall i would advice you to play the race you like visually the most unless you want a numerical advantage over someone else.
my main is a magicka templar and all i have to say is use pucturing sweep and never die. its a morph of puncturing strikes in the Aedric Spear skill line.
just stack as much magic damage and magicka as you can and you will never die as long as you block when needed and even if you don't, after your stun you just get your health back super fast once you starting spamming again lol
using a resto staff as your secondary weapon will help keep the magicka flowing during longer fights.

I agree with what Anghar said above. If you're looking to min/max, Deltia's chart for best race/class combos is pretty good but there are a lot of second best or even third best options that work well too.

All weapons have a block. Bear in mind though, while blocking you can still take damage especially from bosses. Sometimes it seems that your block is merely decoration when a boss hits you right through it and knocks you halfway across the room.
All the 'big damage' moves are telegraphed and you really need to learn to read the signs so you can dodge at the right moment. If you get the dodge right you take no damage. You do, however, lose stamina and that's where a lot of people fall down...they use up all their stamina on the first few attacks then, when they need to dodge, they can't. It's as much a strategy game as a "hit it if it moves" game.
At lower levels, always be on the lookout for bread, you can pick it up free in houses and in camps (steal it if you have to). It gives your max health a large boost which can be a lifesaver in tricky situations.
