I am not one for spaceship sims like EVE. I simply can't get "into character" if that makes sense.
According to Chris Roberts and Co. what will one be able to do in the PU? Will you have a distinct human/alien character separate from the ship? The possibility of such would be the only reason I would start following this more seriously.

Star Citizen occasionally offers free trials. They don't have one currently, but if you're interested in the game wait patiently and you can test it for free when they do another free trial. MMORPG.com has so far always done news when they have free trials, so you'll notice it just reading MMORPG.com news.
Star Citizen is currently in alpha, so there's no hurry to test/purchase it, you can just wait and they'll have another free trial week or weekend eventually.
There are no alien characters in Star Citizen. You can only play as human.
Star Citizen is meant to height on economy, so with the planned gameplay features it's from mining, to trading, exploration and all of that is laid of on a more sandbox manner so players are meant to follow through what they wish.
But it is a space-sim, the core of the game comes from there, you are just playing on the universe as a character not as a ship, you still need them to play the game, even if by crewing a capital ship of another player/s.

1) Mining
2) Transport cargo
3) Manufacturing (in a tiered system from basic materials via ship modules a la ship guns to full scale ship production)

Though the only way i see a player not really into the space sim aspect to get around is more on the MP Content, that is Organizations of players with dedicated teams focused to different things. Multi-Crew, FPS / Boarding teams.
Though the space sim will always tie and glue all of this together, not liking its space sim aspect is cutting off the biggest part of the gameplay... So it's not really recommended to play a space sim when it's not the space sim part you're wanting to experience.
That said, the game is character based at its core (not ship based like EVE). It is about your character in a ship. A lot of resources go into designing the interiors of both ships and locations. Arguably, the majority of delivered work so far has been interiors.
I think you won't have a problem forming an attachment to your character.
There are a LOT of featues that have been promised and proposed. Without drama, I'll say the developers have the work cut out for them. In your best interest, really make your research on this one, more so than other projects. Have a look at what is available now on the test server.
