If you are not picky about the year of release of the games, i have a few personal favorites that would fit in stealth genre:
Thief: Deadly shadows - is still my favorite of the genre, giving satisfaction on luring guards and stealing stuff through the interesting city mechanics and quests.
Dark Messiah of Might and Magic - FPS based on source engine, with RPG elements, and you can probably finish it using stealth mechanics and evading frontal fights.
Robin Hood: The Legend of Sherwood - Strategy stealth game with interesting mechanics, it's 2002 release though, but haven't seen many games replicate that experience
