Well we know several things already. First, the Warhammer World is very much alike Earth, but with some changes made to it. Second, each race's home will be represented in the game.
With that in mind, and referencing to Earth, we know that most of Europe will be available (Empire, Dwarfs, Orcs and Goblins, Chaos), East America (Dark Elves), and a large island where Cuba/Florida is (High Elves). As far as how much will be travelable, and whether it will be a seamless world, is still yet to be determined.

Similar in size to SWG?
Open in the sense you can go everywhere?
More pathed type like in EQ2?
or somewhat like WoW?
It will be similar to DaoC (and WoW). The world will be seamless with loading times only for certain areas (usually instanced ones). There will be 33 regions in the world total, 11 region for each couplet of races (Greenskins/Dwarves - Empire/Chaos - High Elves/Dark Elves).
Each region will contain PvE and PvP areas and certain areas can actually be controlled and conquered. Plus, trough the campaign system, you can advance the war front trough various areas and if you are lucky enough, you could get the chance to siege the enemy capital.

That sounds plenty large to me. I really like the idea of putting pvp areas in each region rather than on in a specific centralized zone. Just seems to make the idea of the game being about a War that much more realistic in that there is constant war near and around you regardless of where you are in the world.

I expect this game to have a lot of content, and I would presume that you will end up with mounts and so forth,
Still its getting a balance between the size, if its to big then people will complain, to small people will do the same, its a fact of life that some people will never be happy with what there given.
With the zone numbers now given I'd say that there about right for people to do what they need to do and work out were they need to go to do the things you must do as the game advances.

aye, it seems a good idea.
We have couple maps of the regions, but without scale. so it is a bit hard to realize how big they will actually be, but here they are:
