Are any of these rated Everyone and appropriate for my soon to be 10 yrs old granddaughters?
Their parents won't let them play "violent video games" so Deer Hunter is probably out.
Also, since they aren't great at taking turns or sharing, a game which both could play at the same time would be preferable.
My first thought was.. Resident Evil...but no...
I think the biggest question is whether you can get comfortable with the controller and in game manipulation. I hate the thumbsticks and having to manually manipulate the camera with one thumbstick in most games while moving with the other. That more than anything is why my ps4 is just collecting dust. At least for me, when you've been gaming for ~25 years on keyboard and mouse, it's hard to move to something that feels less accurate.

To solve my own problem,
FragFX series by Split Fish is half controller and half mouse, for PS4/5 and PC.
Never used them but this is the ideal setup in my opinion.
That setup looks very awkward to me personally. Part of precision control with a gamepad is the leverage between both hands to keep the device stable and coordination between two handed input on the same device.
Besides, most games I play on PC that support controller and KB/M can switch seamlessly between them so I just use the keyboard or mouse when needed. I'd rather just do that.
I think the real advantage of PC controllers are the selection of higher quality devices, like those with Hall Effect switches. So far I'm 50/50 with Xbox wireless controller stick drift. It's a serious issue on PlayStation and Nintendo too, or really any controller using standard analog switches. The quality just isn't there anymore.

Apparently playing a more forgiving game was the trick.
I’m not great but I can now make my way through Souls games with a bit of effort.

Oh, I just googled a list of PS5 exclusives, and that is what it gave me.
Maybe those are just timed exclusives, which seems to be the way most exclusives are done now.
Yeah, SONY has very recently learned they need other platforms to survive. Everyone focuses on PS5 "selling more consoles" than Xbox, but ignore the PS5 ( and all of SONY's previous consoles ) sell at a loss, with the revenue from the games being where the revenue comes from. Their PS+ or whatever they call it now is similar to GamePass, except without the PC revenue MS is rolling in. Now that we know MS is also wanting to buy Nintendo ( actually were in talks ) and Valve ( imagine Steam rolling into GamePass ), it's obvious MS is out to crush SONY ( and any other competition apparently, although they made no offers to EPIC ).
PS 5 sold at a loss when it was launched, but in August 2021 Sony reported that they are now making profit with every PS 5 (disc edition) they sell.
For other consoles, PS 5 digital edition and both XBoxes were initially sold at a loss. I don't know whether they are still being sold at loss. Switch has made Nintendo profit from every sale since it was launched.
The documents about Microsoft wanting to buy Nintendo or Valve were before they bought Activision Blizzard. As long as Activision Blizzard's purchase goes through it's unlikely that Microsoft would try to buy Nintendo or Valve any more: They'd be too likely to get blocked by officials.

My recommendation is to start with new games. Shooters, unless they have excellent gamepad controls would be the last genre I would recommend. Not sure about PS5 (my PS4 had horrible KB/M support), but a keyboard and mouse work seamlessly with Xbox.
Mostly I use a game pad on both PC and Xbox when I can and a game supports it well. The Witcher 3 feels great with a controller, for example. I can't even go back to KB/M with that game. Mostly though, when I learn a control scheme I stick with one or the other and don't try to get muscle memory for both and I don't try to switch controls later unless it really makes sense.

I would start with some kind of action game that doesn't look like the camera will move constantly. Stay away from FPSs, Souls type or anything that requires hyper accuracy. TESO is actually somewhat better on a controller melee-wise and makes the lackluster combat feel less noticeable, if you want to play something familiar. God of War is probably a good title to test the waters if you want something new.

Well since God of War came free and I've never played it might be as good a game as any to try learning to use a controller on.

Same here, I was going to recommend he go in for a checkup. I could never face the look on my PC's face as I bought a console home, she would never forgive me.

Oh... I did get my wife The Quarry for PS5 at some point because she loves horror movies and it's pretty much just a horror movie where you select dialog.
Was there ever a time after the PS5 was announced that one could purchase it without having to deal with ridiculous lines, signing up in wait lists or the like?
If so I do not recall it. Generally when any showed up in store shelves there were lines of people waiting to buy them, and often stores were combining them with $300 of accessories in order to deter scalpers from sucking up all of the stock to resell.
My son stood in a line from 4am to 10 am at a GameStop when they first came out, and paid $800 for the extra accessories.

I dunno. I bought 2 at launch. One from Bestbuy and one from Target. I initially had one from Gamestop but like you said they loaded it up with useless accessories so I cancelled once I secured elsewhere.
Gave one to a kid to take to their college dorm and kept one to replace the PS4/BluRay player.
It's weird. The only thing I do not compulsively buy is an upgraded PC. And thats what I use every single day. It's like I take some perverse pride in how long I can make my old systems last.

I'm the same with my gaming laptops, I see how many years I can stretch them out, up to 5 yrs sometimes as online games that I play rarely require top line hardware and I don't PVP in shooters or the like.
I only upgraded from my last one because Microsoft and the rest of the industry pulled support for Windows 7.
Windows 8 was what was being shipped when I bought it which totally collapsed 3 weeks after arrival.
I purchased a copy of Win 7 for the reinstall which turned to be a big mistake as it could not be upgraded to Win 10 when it released, the finicky components in the laptop didn't have drivers which supported the migration jump.
I tried going to 10 once, bricked the laptop in the sound card as I recall, so I rolled back to 7.
My current video card is a 2070 with Win 12 and still not having any reason to upgrade

That's what Nostromos were for. To allow you to move with an Analog Stick or D-Pad while still having the buttons for actions and the mouse for accurate pointing.
I've been using them for well over a decade. My Nostromo N52 lasted forEVER. Like 15 years or something, before it went out. And I just moved over to the Razer Tartarus from there.
Tartarus Pro for my desktop, and a Standard one in my laptop bag for when I travel (or an emergency backup if I need to order a new Pro).
I have never been able to play with a full keyboard and WASD movement. Too awkward for me.
