I'd start on a PvE so I can get an idea of the multiplayer maps and game play, then switch to a PvP and see what the community is like there. If they turn out to be mature (i.e. not camp your spawn point and kill you continuously) I'd probably stay there. Again, it would also depend on the various rule set- I would never join a server where, once killed by a player, my gear could be looted. I'd hate it to get my nifty shizit after a year of preparing, just to lose it to a jerk in a matter of minutes.
I like open PvP, but I play at off hours allot, so that makes it hard to group all of the time. If you're out questing on your own, a couple jokers can just sit at your quest objective, or spawn, and thump you over and over, and make it impossible for you to get anything done on your own.(please save the "MMO's aren't made to solo." I know that, and group whenever I have the opportunity.)
If they can do something about this, like possibly giving no bennefits after killing the same toon a certain ammount of times, or even giving a penalty if it's obviously just griefing.
I don't mind being beat down out of nowhere, it does make the game more fun. But there is a point where one just throws up their hands in frustration, and turns the game off. There must be a good balance somewhere where you can say:
"Man I just got smoked a couple of times, and lost some cash/gear because of it. Now I'm humiliated , so I'll tuck my tail between my legs and keep going with my quest."
We still dont know exactly what type of PVP servers they will have... I remeber reading something from a developer saying they will have different PVP rules on certain servers to try to cater to everyone..
Personally I prefer the AO style PVP where certain lvls can not engage other levels if the difference is to much.. IE a lvl 200 can not attack a lvl 60 and vice versa... This deters from the griefing that goes on today in lots of OTHER PVP games *cough* WOW...And it aslo keeps it fun and real since when your PVPing your fighting agaist people your own level.. So no more calling in the High level support when you get your butt kicked.
I also like the fact that in AO certain areas are off limits to PVP, meaning that if you want to level at times you can. And if you want to PVP you can hit up one of the War zones.
If they make a server with rules similar to this, thats the one I will be joining

It depends on the type of PvP they incorporate.
