Time Commitment

I was wondering how much of a time commitment should someone have to be able to play this game. Not necessarily all the way to end game but to be able to develop their character and really enjoy the game?

If you play a couple hours each day for a month or two, you'd be halfway to endgame.
How fun the game is all depends on you and your ability to cope with the enormous grinding that is needed to gain levels. I find the reward of hard grinding to be enjoyable... but most people I know detest the hardcore nature of this game.

You won't enjoy the great fun of PvP, guild drama, and castle sieges for a while unless you resort to illegal means, which I really hope you will refrain from doing. Getting up there without cheating gives you that warm feeling of accomplisment.
I bought some adena when I made a character on another server because I felt that all that time I've spent leveling on the previous server was wasted now that I wanted to change residence....  I quickly started to feel less dedicated to reaching goals ingame after that, and ended up taking a break from the game.

Yea I am the same as you when it comes to playin an MMO, I like to do things my own without cheating to get that sense of accomplishment. Any recommendations on a good server to start on?

If you are european you might want to play on the server named Teon -as castle siege times are set to the evenings in europe on there.
Otherwise Bartz is good. Have fun, and report the bots! :)

Lineage 2 does overall require a long investment of your time
to reach "end game." But L2 allows for casual play dispite
what seems to be the hardest grind out there in the market.

If you're only going to end up playing for 5 hours a week, I would
suggest you go somewhere else. You'll barely level within that time
frame if you are not powerleveled or decently equipped.

The only thing that you really need to do is get friends and a clan.
You have hate people to literally play this game legit solo for 78 levels.

Bots are pretty easy to spot, ignore them for the most part or
    report them to a GM.

As for servers, I'd personally choose the first three servers and Teon.

FYI, make sure you make sure your first clan is neutral politically
    in terms of clan wars.

Time commitment i suggest to play as much as desired, the more you put in the game the more you get out. Playing 2-3 hours a night after work or school will get you somewhere eventually unfortantely with this time frame you will probably be forced to eBay but you will still get alot out of the game.

I woudl choose Bartz, largest population farmer fighting ect. Most active fourms, see www.l2guru.com

I have no problem with grinding. Played FFXI and loved it and that was a huge grind(especially later levels). As long as I can get a sense of accomplishment with all the time I put in im fine. So far it looks like the low level areas are pretty empty so I don't think I'll be makin many friends or joining any clans till I'm a higher lvl but thatis fine, hopefully that won't take too long. Just curious but at what level do things really start to get interesting?(I mean besides the constant grind)

By halfway you must mean level (around 40).  But halfway as far as actual time spent playing you will be no where near end game by that time.  Especially if you do it legit. Now if you mean 3-10 hours per day by "couple hours" then yes that can be accomplished

IMO you can play this game just 2-4 hours per day and have fun with it.  Its fun from the beginning all they on.  But the more you play the better you get and the more you learn and gain levels.
