Picking up a mage job won't "effect" your SAM at all.. unless your going to play SAM/mage job.

Only your current main job and current support job have any effect on your character. Any job that you've played but "put aside" effectively doesn't exist until you tell the moogle you want to use it again. So, no, going out and levelling a mage job isn't going to do anything to your SAM (unless you decide you want to sub it, which probably isn't such a good idea).

No new content ID needed of course, just switch jobs in your mog house whenever you would like.  You can theoretically be the best at every job and when you switch jobs you completely change.  Your stats go up and down accordingly to suit that job.

Subbing White Mage is a great way to solo (in the early levels at least) for really any job.  For fun, I leveled Nin/Whm to 17 easily by myself, and I intend on going further that way.  When I party, however, I will switch to /War.  I would recommend Sam/Whm until you start partying as well and go with Sam/War afterward.
