I read in the book that comes with it that u are asigned to a server depending on your connection like i have broadband and i got sent to odin and a friend of mine has DSL and he got sent to hades but i donno for sure so dont quoet me
There are 32 Servers, and 1 Test server. Its really hard to tell you which server is the best, because most of us don't have 32 characters. And most people will tell you their server is the best. (Because its the ONLY one they've ever been on). So, it really doesn't matter to much to be honest.

Yes, although it can be very frustrating if you're trying to get into one of the more crowded server, since the process weights you towards the less populated ones. More to the point, most people simply take the server they're given (I did) and as a result the populations don't have large differences. There's gonna be a server with a greater Eastern Time Zone population, but it's not going to have *that* much more people from that zone in it.

I play in the EST time zone, and Unicorn has never let me down. Unicorn has a large US population and a very very large Japanese population.
We're one of the few servers (1 of 6 left i believe) that are undefeated in Beseiged.
