Okay, yesterday, someone suggested starting a recipe thread. And since I cook ( a LOT) I thought I'd make one!

Comfort Foods!!!

Cheesy Brat Stew

  • 6 bratwurst links, browned and cut into 1/2 inch slices
  • 4 medium potatoes, peeled and cubed
  • 1 tablespoon dried minced onion
  • 1 (15 ounce) can green beans, drained
  • 1 small red bell pepper, seeded and chopped
  • 2 cups shredded Cheddar cheese
  • 1 (10.75 ounce) can cream of mushroom soup
  • 2/3 cup water
  •  
  • Instructions: Place the bratwurst, potatoes, minced onion, green beans, red pepper, Cheddar cheese, mushroom soup and water into a slow cooker. Cover, and cook on medium for 3 hours, or until potatoes are fork-tender.

"Raw" Mac n' Cheese

8 ounces elbow macaroni
4 cups shredded sharp Cheddar cheese
1 (12 fluid ounce) can evaporated milk
1 1/2 cups milk
2 eggs
1 teaspoon salt
1/2 teaspoon ground black pepper

Instructions:

  1. -In a large pot, cook the macaroni in boiling water 10 minutes, or until al dente, and drain.
  2. -In a large bowl, mix the cooked macaroni, 3 cups of the sharp Cheddar cheese, evaporated milk, milk, eggs, salt, and pepper. Transfer to a slow cooker that has been coated with non-stick cooking spray. Sprinkle with the remaining 1 cup of shredded sharp Cheddar cheese.
  3. -Cover, and cook on Low for 5 to 6 hours, or until the mixture is firm and golden around the edges. Do not remove the cover or stir the mixture until the mixture has finished cooking. Serve warm.

 

Creamy Parmesan Spinach



3 boxes frozen spinach, defrosted

2 (3-ounce) bricks cream cheese

1/2 small white onion, finely chopped

2/3 cup grated Parmesan, 2 rounded handfuls

1 teaspoon coarse black pepper

Instructions:  Place spinach in microwave to defrost. Place boxes on a dish to defrost the spinach because it will leek. While spinach defrosts, place cream cheese and onions in a medium sauce pot over low heat. While cream cheese is melting and spinach is defrosting, continue forward with meal prep then return to spinach. When the cream cheese melts, add Parmesan and black pepper to the cheese. Drain spinach in clean kitchen towel, wringing it out until dry. Stir spinach into sauce, season with a pinch of salt, to taste, if necessary and let the spinach sit over lowest heat possible 10 minutes, stirring occasionally.

Creamy Slow Cooker Potato Cheese Soup

  • 1/4 cup butter
  • 1/2 white onion, chopped
  • 1/4 cup all-purpose flour
  • 2 cups water
  • 2 large carrots, diced
  • 4 stalks celery, diced
  • 1 tablespoon dried, minced garlic
  • salt and pepper to taste
  • 1 cup milk
  • 2 tablespoons chicken soup base
  • 1 cup warm water
  • 5 pounds russet potatoes, peeled and cubed
  • 1 bay leaf
  • 1 cup shredded Cheddar cheese
  • 6 slices crisp cooked bacon, crumbled
  1. Instructions:   Melt butter in a large saucepan over medium heat. Cook onion in butter until translucent. Stir in flour until smooth, then gradually stir in 2 cups water, carrots, celery, garlic, salt, and pepper. Heat through, then stir in milk. Dissolve chicken base in 1 cup warm water, and pour into vegetable mixture.
  2. Place potatoes in slow cooker, and pour heated vegetable mixture into potatoes. Place bay leaf in pot.
  3. Cover, and cook 5 hours on High, or 8 hours on Low.
  4. Remove bay leaf. Puree about 4 cups of the soup in a blender or food processor, and then stir pureed soup into contents of slow cooker. Stir in cheese and bacon until cheese is melted.

    Desserts!!!

    Two-step cheesecake

    • 1 (8 ounce) package cream cheese
    • 1/3 cup white sugar
    • 1 (8 ounce) container frozen whipped topping, thawed
    • 1 (9 inch) prepared graham cracker crust

    Instructions:  In a large bowl beat together the cream cheese and sugar until smooth. Gently fold in the whipped topping. Spoon into the prepared crust. Refrigerate 3 hours, or until set

    Jam Muffins (possibly more breakfast, but they're gooood.)

    2 cups all-purpose flour
    3 teaspoons baking powder
    1/2 teaspoon salt
    1/2 cup white sugar
    1 egg, beaten
    3/4 cup milk
    1/4 cup vegetable oil
    1 cup any flavor fruit jam

    Instructions: 

    1. Preheat oven to 400 degrees F (205 degrees C).
    2. In a large bowl, stir together the flour, baking powder, salt and sugar. Make a well in the center. In a small bowl beat egg, milk and oil together. Pour all at once into the well in the flour mixture. Mix quickly and lightly until moistened, do not beat. The batter will be lumpy. Gently stir in jam.
    3. Pour the batter into the prepared pan and bake at 400 degrees F (205 degrees C) for 25 minutes or until golden.

     

    Copycat Cheesecake Factory Oreo Cheesecake

    Crust

    1 1/2 C. Oreo Cookie Crumbs (about 23 Oreo cookies finely chopped)

    2 Tbsp. Melted Butter

    9" Spring Form Pan (buttered on bottom and sides)

    Filling

    1 1/2 lb. Cream Cheese

    1 C. Sugar

    5 Large Eggs

    1/4 tsp. Salt

    2 tsp. Vanilla

    1/4 C Flour

    8 oz Sour Cream

    5 Oreo Cookies (coarsely chopped for the batter)

    10 Coarsely Chopped Oreo Cookies for the Top of Cheese Cake

    Instructions:   Crust

    Mix melted butter with Oreo crumbs and press in spring pan cover the bottom and 1 1/2" up the sides with crumbs, set aside.

    Filling

    All Ingredients need to be at room temperature before beginning. Beat cream cheese until light and fluffy. Keep mixer on a low setting during the mixing and beating process. Add sugar gradually and continue beating cream cheese until mixed through. Add eggs one at a time and continue to beat until blended. Measure the vanilla, salt and flour, pour into cream cheese and egg mixture and beat until smooth. Add the sour cream and beat well. Turn off the mixer and stir in the coarsely chopped Oreo cookies with a spoon.



    Pour cream cheese into the spring pan and place the nine coarsely chopped Oreo Cookies on to of the cream mixture. Place pan on the top rack and in the middle of a preheated oven at 325 decrees and bake for one hour and 15 minutes. When time is up prop the oven door open and let the cheese cake stay in the oven for one hour. Remove from oven and let cool enough to place in the refrigerator for 24 hours. It is worth the anticipation. A cheese cake should season. The flavor ripens and becomes enriched.

    French Silk Chocolate Pie

    1/2 C. Butter

    3/4 C. Sugar

    1 oz. Baker's Bitter Sweet Chocolate

    1 tsp. Vanilla

    2 eggs

    9 inch baked pie shell

    1 C. whipping Cream

    1/2 C. Walnuts

    Instructions: Thoroughly cream room-temperature butter with sugar. Blend in melted chocolate and vanilla. Add eggs one at a time, beating 5 minutes after each addition. Pour into cooled pie shell and chill 2 hours before serving. Top with whipped cream, then sprinkle walnuts over the top.



    Remember you can substitute 3 tablespoons of cocoa plus 1 tablespoon cooking oil if you do not have any bakers squares on hand !

    Turkey breast sandwich on Whole Grain

    Ham,

    Cheddar cheese

    Tomato

    Onion

    Lettuce

    Mayo/Mustard

    Jalapeno!

    Appetizers!!!

    Warm Jalapeno Cheese Dip

    1 (12 ounce) can evaporated milk
    2 tablespoons butter
    3 tablespoons flour
    1/2 teaspoon ground turmeric  (omit if you don't have any)
    8 ounces shredded pepper Jack cheese
    1 cup prepared salsa
    2 tablespoons fresh lemon juice
    Salt and ground black pepper

    Instructions:        Microwave milk in a 1-quart Pyrex measuring cup until steamy. Meanwhile, melt butter in a large saucepan over medium heat. Whisk in flour and turmeric until smooth, then whisk in milk until creamy and thick. Whisk in cheese. (Dip can be refrigerated in an airtight container up to 3 days.) When ready to serve, return cheese sauce to saucepan; stir in salsa and lemon juice, and slowly rewarm. Adjust seasonings, including salt and pepper to taste, and serve.

     

    Slam Dunk Crab Dip

    1 (8 ounce) package cream cheese, softened
    1/4 cup milk
    1 (8 ounce) package imitation flaked crabmeat
    1/4 cup sliced green onions
    1/4 cup chopped sweet red pepper
    1 teaspoon curry powder
    1/2 teaspoon garlic salt
    Assorted crackers

    Instructions:  In a mixing bowl, beat cream cheese and milk until smooth. Stir in the crab, onions, red pepper, curry powder and garlic salt. Refrigerate until serving. Serve with crackers


    Easy Hummus   (Don't complain. Its good for you!)

    • 1 (15 ounce) can garbanzo beans, drained, liquid reserved
    • 2 ounces fresh jalapeno pepper, sliced
    • 1/2 teaspoon ground cumin
    • 2 tablespoons lemon juice
    • 3 cloves garlic, minced

    Instructions:  In a blender or food processor, combine garbanzo beans, jalapeno, cumin, lemon juice, garlic and 1 tablespoon of the reserved bean liquid. Blend until smooth


    Stuffed Mushrooms

    • 36 fresh mushrooms
    • 1 (8 ounce) package cream cheese, softened
    • 1 (6 ounce) can crab meat, drained
    • 1/2 teaspoon garlic salt

    Instructions:   Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet with non-stick cooking spray.    Stem the mushrooms. Reserve 1/3 to 1/2 of the stems and mince them.    Whip the cream cheese until smooth.     In a small bowl, combine minced mushroom stems and crabmeat. Blend the cream cheese into the stem and clam mixture. Add garlic salt and mix well. Stuff the mushroom caps with the cheese mixture. Arrange the caps on the prepared baking sheet.    Bake mushrooms at 350 degrees F (175 degrees C) for 20 minutes, or until the mushrooms and crab mixture are hot, and most of the liquid from the mushrooms has collected in the pan.

    No, I don't tend to photograph my meals. I believe that food, unless it is made to be shown off (such as bento), there isn't a real need to take a picture of it, because if you do, it'll be cold by the time you get to eating it!

    pizza burgers



    take two pieces of hamburger make very thin patties

    put cheese, onions, and jalapenos on one

    cover with the other patty fold edges and cook while tossing on your basic pizza/italian seasoning



    /me drools at the greasy nightmare of DOOM, but it makes you so happy.



    fried rice, catfish, and veggies(what ever you want, I like squash with a few green things).  boil the rice(covered until most the water is soaked up/evaporated then set aside for a few mins. could add kikomen or something like that if you fell like it) with the veggies on top while cooking the fish in a sauce pan, then when its done toss in the other two.  this is with regular rice not instant rice.





    basic onion rings



    flour, milk, egg, a tiny bit of baking powder and sugar add water to the right consistancy.  dip'em and fry'em.  a treat a few times a  year.  you can also make homemade cheese curds with it too as the batter sets before the cheese gets away.



    its cooking you follow recipes for baking.

    I find it amazing that by 2020 first world countries will be competing to get immigrants.

    I think about trying the onion rings. Perhaps as a sidedish for the burger? Ever tried making you r own french fries? Cokk them slightly for about seven minutes, sprinkle them with olive oil, season with salt and pepper and let them roast in the oven for about 25 min. Delicious!

    for the onion rings you're going to want to look up the general proportions.  soo many sites on the internet for cooking though.   cooks.com is a decent one no non-sense not affilated with anyone that is incrediably obvious, great for the "how'd they make that?" type thing.

    Almond-Crusted Halibut Crystal Symphony - I love this dish.



    I do have some original recipies, but I don't give them out. Also make a performance in the kitchen if they there and your cooking it. It's great. I need one of those Kiss the Cook aprons, so I can get some kisses before dessert.

    Oh, I can cook... the issue is time, really... One, in finding the time to do so, and two, everything I seem to cook takes like an hour or so prep time. If I try something simple, I'll wind up screwing it up. Although a quick meal that I've made consists of cooking up some smoked turkey bacon and crumbling it into a pan of fresh tomatoes (diced), fresh garlic, peas and some olive oil and butter. Put that over some pasta... Kind of threw that together one day when we had some extra tomatoes and bacon that we needed to use up. I was surprised how the smoky flavor permeated through the sauce.

    Sounds good. Yeah I know what you mean by "time". Baking is my weakness.

    If you're blindfolded, how do you know the bananas are ripe enough? :)

     Haha, No, I don't think so. I'm already not getting enough sleep, and starting a restraunt would make it worse.
