Because in most cases (in EverQuest and WoW) raids are more challenging and more organized than PvP. Not everyone thinks like you do. It is still possible to challenge yourself through raids and when you do a boss for the first time he/she usually outsmarts you and kills all 40 of your guild. Contrary to belief A.I. can be programmed to be better than players. If you don't believe me then go beat a computer at grandmaster level in Chess.
Also, why be so selfish? It's cool when you get great items but (to me) it's also cool when my guildmate and friend get epic loot at raids. It's fun to grow strong together IMO.

There are no RP politicians to kill in a FPS. No lasting impact on the community. Your faction or guild can't gain any power or influence. The FPS just lacks a few dementions that makes it fun.
