Not sure on Server but I played a Spy for my 14 day trial (more like 3 day, then I went to CoX) with Assassinate you can pretty much 1 hit or 2 anything at 1st, but don't get all dependent on it. Other professions might be better but hey that's what I played and I liked it.

I prefer Ahazi but I don't know why. Try Bria or bloodfin, Chilastra is good as well.
Cheap and easy to grind, try Jedi. It has good skills against AI but when you decide to switch to PvP at 90, you will want to respec or get slaughtered like a cow. Avoid anything with a bracket, silver or gold, do the legacy to 45 ish. That will get you a good feel for the game. As Jedi you will want to focus on animals and not human AI because most melee combat and your on equal terms.
Keep in mind there really is no penalty to death so if you want to recon, just do it. Pay the droid in the cloner a few K and he will take the cloner sickness away. Poke around, be nosey, see what you like or don't.
Swordsman and Teras Kasi were always two of my favorites. Everybody says the servers are all full, so pretty much anywhere you go should be full of people.

I'm a bounty hunter. How do they fair against Jedi's? I'm only level 15 right now, and I found a jedi level 15 and he barely beat me. Actually, out of the 3 times we fought, he won twice, but the last time I pretty much slaughtered him once I figured it out. But of course he had no lightsabre, to early in the game.
I'm wondering if Bounty Hunter was such a good choice... It just looked fun, so thats why I chose it. I am certainly having a blast just cappin' things from a distance.
I enjoy undercutting people in the market place - it's the only PvP a crafter gets.

Commando is easy mode in early levels
Mid levels to high lvls I'd say jedi
Commando is alpha class pvp at 90
Jedi is probably best pve class 90
Medic is solid in both pve and pvp.
So it depends what kind of game you want to play.
