Well, there's mining - but you're limited to inferior grade ore unless you'll venture into unsafe space. And then you're a major target for gankers.
So you can play the entire game in a safe space if you're willing to settle for subgrade items/ore. Or you can take a risk of getting killed ( and you'll be killed...a lot. ) and go for the better stuff. Up to you.
i have lost everything i owned in eve , going from 0.0 space one day which is a kill on sight place for everything heading to jita which is a 0.9 i think space might be 1.0 i dont know , i was comming back and i was told it was clear for me to go on , it turns out 5 jumps before spafe space of 0.5 there was a gate camp that no one warned me about and i lost everything i had in my hualer which was all my mods and ships (assault frigs plus fittings) it was all T2 gear worth over 700 mil in isk which to this day i still havnt made back

Which illustrates a perfectly good life lesson for EVE, Don't put all your eggs in one basket. keep your income spread out and losses are usually quite manageable. As for OP, without miners and manufacturers what would us shooters use to blow each other up?
I dont know that your question has really been answered yet, so let me try.
Eve is very wide open. Yes, the game is pvp oriented and let me tell you I've never gotten any thrill from pvp like I get in eve. But there is Empire space which you cant really be bothered with getting shot at. Some corps make their living entirely in empire. ya there is low end ore and npcs there but its safe. But there are tons of industrial corps that always need more miners and industrialists. I know I used to really get into that stuff and spent about 4 or 5 months in empire with my friends in a corp. We mined togethor and had our own industrial base. We built and sold ships to the public.
The game is hard to pick up at first, but I suggest trying the free trial and getting into a corp as soon as you can. People are pretty helpful and you'll soon find out that the game is what you make of it.
Well, so far I've played for about 2 weeks and earned myself a couple of tier 1 frigs and a cruiser..... and have not fired a shot in pvp.... so yes, lots of room for pve in the game.
That said, i'm training up my skills for an eventual move to 0.0 space since Eve's all about PvP....

Mastaccolli,
As you can see in this thread, the trial referral system is having problems right now. In the mean time, you can still get a trial key by using the MMORPG.COM offer or by making your email in your online profile visible so I can send you a Buddy Key.
Now to answer you initial question:
Be aware that in EVE, the economy in the game is 99% player driven. Everything that is used by players on a regular basis is harvested, processed, researched, manufactured, distributed, and sold by other players. It is a very rich environment for 'business', that even extends beyond simple goods and into services, where enterprising players have found creative ways to operate in the game, anything from paid mercenary units to banks and stock exchanges to deep space station development. And even in groups of players that specialize in combat, members are still needed to manage the corporation and operate their supply chains.
However, with all this support for non-combat game play styles, there still is no such thing as 100% safe areas. In the highest protected areas, people are still capable of making costly suicide runs against you, and official wars can be declared and paid for that would allow another group to attack you without penalties.
While threats such as these will not be common, they still exist. Successful pilots learn that in the game there is always an element of risk assessment. In EVE, players become strong not because of their in game assets or 'skillz', but because of the group they play with and they knowledge and experience they equip themselves with.
Eve is the ultimate gankers game. They sit around near the gates in 0.0 space waiting for people to fly past. I honestly think pvp is rather poor in Eve. There is little skill involved and anybody that says there is hasn't played a game with real pvp. But to answer the question, no Eve isn't all pvp. Just keep to the safer parts of space and you can avoid the gankers! It's actually a decent game, apart from the corruption etc etc.

Well unfortunatly Montin most people that make these comments are empire people who have on one or two occaisons wondered into the wrong part of 0.0 and got blown up.
0.0 pvp is very strategic, the job of FCing is not one that is taken lightly. You have to be constantly taking tens of factors into account..for example What kind of ships does my fleet consist of? What kind and how many ships does the enemy fleet have? Where is the enemy fleet? Do I have a foward and rear scout? Do I have eyes on the enemy fleet? What constelation am I in and are ways for a fleet to go around and flank us? Does the enemy fleet have a cyno ship with capitol support? Should we go through the gate and attack or should we defend our side of the gate? Who is called primary, who is secondary? What should we do if we begin to lose more ships than them? Do we have an exit plan?...
You can live in empire your entire time in Eve and never pvp. You can become quite rich doing so.
Don't let them fool you, the ores in Empire have become almost as valuable as in the less secure areas as the market has been flooded with high end ores as the new areas just don't have the low end ores which they need to make things.
So the answer is yes to your question.
But remember Empire is not 100% safe, don't carry what you can't afford to lose. There are people that will gank you in empire if it is profitable enough.
I played for a couple of months and got bored because could not find anything to do other than PvP after a while. But "pvp" in Eve is 99% of the time people sitting at a gate all day and killing anyone who jumps in (just for the hell of it usually), not the fast paced and skirmish like PvP you know from other popular MMOs (its like: you jump in, you move 2ft, you die before you see what hit you, or the other way round). So that also gets boring very quickly.
The developers seem to support this style of "pvp" as well so don't expect changes any time soon.
All up to you, but its worth the 10 day trial either way.
nasher u did not found the right guys to pvp ..gatecamping is NOT pvp, is an escuse for pvp for carebears, so they could say is pvp...
and yes u missed the fast paced pvp eve can offer.
yesterday i had a little battle 3 of us pilgrim, vagabond and crow, against a tempest sniper fitter, megathron blasterboat, cormorant and a little falcon. believe me was an adrenaline rush. In the end both enemy bs died, cormorant warped with 30% structure and falcon got unharmed. We all lived, and did it very good. That were 10 minutes of shooting, moving, changing targets , movin in 80km cubes, runinng away, attacking again, using EW at maximum capabilities and all.
I have this kind of battles 2-3 times a week and i play 5-6 days a week 1-2 hours. I think i play with the right guys.

Oh boy. If I weren't already banned for making a generic statement about people in tinfoil hats being "brainless idiots" I'd probally make a statement which was flaming "montin". (this is not an accusation of Montin's mental capacity)
"Ganking" in 0.0 is a required method to secure your borders and assets in lawless regions of space. Players who are friendly to the corp or alliances in the areas ventured are likely to be at a positive status which will designate them as "Blue"; red equals dead. Being that EVE is asset centric you will want to get in with a good group of players who are able to muster enough forces to lock down systems, and hopefully regions, inorder to safeguard their, and yours, assets.
Montin "thinks PvP is rather poor" cause "there's little skill..." then goes on to claim if you like the PvP in EVE it's 'cs you've nenver played another game with "real pvp". This is deffinite sign that Montin doesn't get it. EVE is based around a zero-sum PvP environment which is goverrened by a heavy sense of logistical challenges that dictate strategies that govern real time tactics. It is *not* a twitch-fest where caffein and crank influence the outcome, but his/her "opinion" is still valid since it is an opinion.
As stated, stay in the "safer" parts. Note, nothing is "safe", but there are plenty of areas which are "safer".
YES! There is room for manufacturers, miners and suchlike. You do not have to PvP at all. You can sit around in hi-sec as long as you like and, unless you fill a hauler with amazing stuff and sit around waiting for the to suicidegank you you will probably be entirely fine (just dont steal, shoot at people until shot at and so on)
Have played PvE for a bit now. 3 months or so. I`ve used that time to get my basic moneymaking- and learningskills in order. For the last 2 weeks I`ve been training interceptors and I expect to have my intyskills completed in about 2 weeks more. Until then I PvE, make money and build standing. In 2 weeks time tho... WHAMMO! No gatecamping, but small waspswarms of interceptors going out to hunt
EVE is what you make of it. AFAIK the biggest moneymaking is done by mining 0.0/lowsec with Hulks. If you choose the minerbuild it wont take you long getting into a covetor in preparation for the Hulk. starts slow, but builds amazing speed

when you get killed, do you lose your ore?
Yes... and your ship, and your equipped modules, and some of your skillpoints if you don't have a proper clone.
EVE has the ultimate death penalties.
