I've got extensive MMO experience, but looking at this game, it seems obvious that it's innovative and will require a unique mindset to play effectively. Thus I was wondering if anyone knew of a good beginner's for people looking to start playing this game.

If you go to the www.eve-online.com website, they have a rudimentary guide, but, as an expierenced player, the only thing I can really suggest is to try the 14 day trial, and train the basic learning skills as quickly as possible, then, the rest of the skills will train faster for you. Please note, this game is a heavy pvp favoured game, I've know new players to undock and be killed on thier first day, and, decide the game is not for them.
This is a mindset that will kill the game for any new player. EVE is more about finding your own way to play the game with other people that how to develop your character as fast as possible.
I'm not sure if you know how the skill system works yet. There are over 300 different skills available in a skill tree that is at most 4-5 skills deep and spans over 20 skill categories. Each skill provides certain bonuses as well as fulfilling requirements to use ships, equipment, and services. Skills are acquired in real time (even while offline) at rates based on your character's mental attributes which can be modified by special skills and implant items.
Don't get into the pattern of playing the game only to wait for your next skill to finish. Especially in the beginning, its important to experience what the game has to offer, and this means figuring out your basic skills.
Getting your Learning Skills trained up will be something you'll get to eventually. But don't give it priority over experiencing the game.
The above suggestion is very misleading. As a newly created character you'll not need to be concerned about these "learning skills" since you'll start with some already trained up. Do not pay much attention to lvl 5 skills at first, the effects are negligible and the time required to gain them will not provide you with a return. Skill Level 2-4 is probally the extent you'll want to work on within your first 2 weeks.
p.s Always pay for your platinum insurance!
The company running this game intentionally doesn't publish much documentation. This way when people find stuff that doesn't work correct they can claim it's a "feature". Do a search on their forums for feature and you'll see how much stuff is just hosed.
My best advice to you is that you join a new player friendly corp. You will learn more from a corporation than you will from any written guide.
If you hang out in the in game help chat channels you will also learn a lot.
