Well you can either decide when you make a post if you want to subscribe, there's an option at the bottom of the editing screen with "subscribe to this topic" in there, just untick it.
Failing that if you view the threds you are subscribed to there's a link at the bottom of the last page with a "unsubscribe from this thread" link you can click on
I don't think there's a global setting you can change to remove yourself from all subscriptions.

Click the "Your Account Settings" button in the top right corner...
