I haven't been able to find information regarding:
1) Does the weather ever change?
2) Do the waves ever change? Like sometimes a port will have high tide, choppy waves, or the water looks like still glass. Or a section of open ocean will have surging swells one day, but will have calm seas on another.
3) Fishing? I doubt they'd have it at release because it isn't vital. But this game has the potential for awesome fishing tournaments. Imagine hunting down the kinds of monsters that were drawn on ye olde charts and maps.
Comments
1. Not at release but it is something that has been brought up many times and *may* be considered for later on
2. Not to my knowledge
3. Again, not to my knowledge.

Wind changes.
No fishing, jumping or swiming underwater. This is not historically accurate according to fans. They are really happy about it, as good fans should be.
Still wish I could be a little "inaccurate" and take a dip in the shallows. Luck be damned!
I never really got the - Historically Accurate - argument in certain games. I mean c'mon.
1) It's a game. Yah, developers can get too fantastical and immersion suffers, but fishing? Swimming? Jumping?
2) Even the "accurate" games are riddled with inaccuracies that get a pass. Respawing? Limits to plots of land?
I don't mind a game trying to be less "out there" with the gameplay elements. I just find it a little convenient how some potential gameplay elements are deemed "inaccurate" instead of calling them what they really are. "Inconvenient to develop at this time"
Don't get me wrong. I'm not hating on PotBS. It's looks like a ton of fun and I look forward to playing. Just my 2 cents.
Swimming is a lot of work for not a lot of new interesting gameplay. Jumping is an insane amount of work, because of how our avatar motion is handled; we all want jumping but there are a lot of other features we want more.
Fishing... I've been considering fishing. I could add fishing in a kind of abstract way. What I can't do without some additional code and art work is do 'standing on the dock' fishing. So it's something I'll probably try to sneak in, but it won't happen before launch.
Nice to see someone working on the game commenting here.
For what it is worth I can see the point on swimming, and not just from a gameplay standpoint - if the water has to become gamespace it would seriously limit what can be going on above the water.
While I have never personally understood the whole fishing in an MMO craze I would toss in my two cents that wherever and whenever possible to toss in off beat things to do it can only be a plus. One thing that really appeals to me about PotBS so far is the whole breaking the mold thing - and while I don't expect a big, open sandbox I hope there are lots of alternative things to do. Far too many MMOs release these days with only one thing to do and only one way to do it.

Exciting as I am about your upcoming game.
But jumping really isn't that much of a gamebreaker, I for one can do without it.
It can be fun though.

I'm so broke. I can't even pay attention.

My 2 cents about fishing (i'm investing a whole 4 cents now!). Think about waiting to do it after the game has it's sea legs with a solid player base and the important bits are out of the way. When you finally can focus on it, I think fishing has huge potential in this game.
To date, MMO''s haven't done fishing well at all, which is probably why people don't care about it being in PotBS. But with a sea-centric title like yours, I see "Old Man and The Sea" epic battles between man and sea-beast. Don't even mess with dock fishing.
You're making your way through a port, when you overhear an old sea salt spinning his adventures for a few npc children sitting at his feet. He sits on a barrel, pipe in hand, adding to the suspense with long pulls of tabacco.
"She were 20 yaarrrrrds if she were a foot."
He's describes, great monsters of the deep. The kind that were illustrated on ye olde maps and charts, as well as some places where the "monster(s)" lurks today.
All fishing is done out at sea, from the ships.
Hand thrown harpoons are your main weapons of choice. Ramming is a last resort in dire situations.
Save art and animation time by making the target an hulking, amorphous, shadow sliding under the surface.
The risk to fishing is that you don't know how much power the beast is. Will go down in a few piecings? Or will a few crew members be yanked from the deck by their harpoon lines and swallowed? Will crack the hull? Damage a mast?
Trophy animals are hung up by their tails in port. the only art would be to make a giant swinging carcass.
The reward is a crowd of NPC's crowded around your impressive catch and talking about you. Record holders also have plaques in the local tavern. Food from your catch can also be purchased by your factions members, giving them temporary buffs.
Is it worth the work? I dunno. You tell me if its worth it to be the first game that does fishing RIGHT. Setting the standard ftw.
