You should try SWG.
Just try it. 20.00 bucks. I think there might be a trial. The immersion, if that is what you seek, is better there than any game on the market.
The world is like in the movies.

Hah you know I am kind of in the same boat. I have been going back to single player games, and back to watching anime and such. Work, and going out doesn't leave too much time for games anymore, and the time I do have to play games I definitely don't want to spend killing 50 boars, then 50 bears, then 50 something else's. We shall see what comes out.
I currently can't get into any MMOs I try to play. Recently I have tried SWG and vanguard and both could not bring me into the world. I found after getting to about level 10 that I was working not playing. I am not sure if there is a "cure" for this but I am sure by the time the next generation of MMOs comes out (PoTBS, AoC, WAR, Tabula Rasa etc) I will know if I am completely done with them or not. If their "new and enticing" gameplay can't suck me back in then I don't think there is anything that can.

i agree, this is, even in it's current form, a world mmo. it may not be the one i prefer anymore but the people who play it now seem to enjoy it.
...and that last statement made me wanna cry.
*edit*
i think what's missing in mmos is purpose. a purpose to play, a purpose to exist in a game. it's funny when you get to a point in a game where you actually think IT needs you to play, more than you need to play it and you play because as much as you enjoy it, there's some willing obligation that needs you to play, purpose. uhh.. if that makes any sense.

Sounds like burnout to me. Probably because a lot of the current games are very similar to WoW (note to flamers: not to say WoW is original, but it is the one the OP was playing, so I'm just going by that.) I'm not sure why you left WoW, but I'd guess if you weren't having much fun with warcraft any longer that playing a game just like it is going to be boring. I'd say take a few weeks off from MMO gaming and do something else, then try coming back.
After playing DAOC for years, Im feenin' for another game that I can absorb myself into when Im not working and everything is done. I remember sitting on the hill at lvl 13 pulling in the undead with my crossbow while it rained down on my cloak; thunder overhead. It was relaxing and wasn't about fighting anyone.. just chillin in a world that I didnt have to worry about taxes.
I'm with you. I hope I can find a game like that again. Maybe WAR, I dont know. Good luck.

FFXI has good immersion, but it also requires a lot of grinding.
WoW is pretty immersive, but also very simplistic and full of children.
If you like quests, maybe wait for Hero's Journey? I'm a big fan of quests, and that's the game I'm looking forward to.
I suggest you play some other Genres for some time. I got the same Problem, trialed, tried, canceled many many MMOs after leaving WoW, all was boring. Now I play some Battlefield, some Dawn of War and since today the World in Conflict Open Beta (try it if you haven't yet, it's so much fun IMO ).
I'll return to MMOs when WAR releases, before that, I'm already bored when just reading the feature-lists of all those other MMORPGs releasing ^_^
Play some non-MMO for 3 months or so, and then join a "Next Gen" MMO, don't go back to WoW or another "old" MMO, you'll become bored again.
If you are suffering from burnout, give the EVE free trial a shot.... the game isn't for everyone, but it might be just the thing you're looking for. Just be sure to remember, EVE is really about joining a corporation and either mining, defending turf, pirating, trading or ratting together......
