I'm leaning toward pre-SI era DAOC, when all we had was our class abilities and very few realm abilities. If I didn't have an issue with Planetside being considered a mmorpg, I'd say Planetside.

Tabula Rasa, again this has some flaws but combat is very streamlined and fun, if you discount the collision detection, wich is none existant.
Most games though had its ups and downs that I enjoyed or hated.
And I have a really hard time getting into fantasy styles, regardless how well done they are.
But if we extend gameplay beyond actual combat, may we do that?
To me it is VERY important to be able to go were I want to, mostly this means climbing cliffs and mountains that you should not.
Artificial invisible walls or slopes you can not get up infuriates me to a point were I just leave.
Vanguard did this very well, man I was all over that place, it was mostly empty but damn you could get some nice views from mountain tops in that game.
Anarchy Online was and is an explorers wet dream, I could cruise for days in my Yalm.
In Wow I spent hours just to get to a camp between that icy place and that elven island wich you flew over when going from one to the other, ran into a troll NPC helloween party, doubt many had been there and I doubt you were supposed to get there, but it was fun all along.
Travel times also is an important part of gameplay for me, pointless running to get from A to B can drive me nuts, I usually love the ride the first or second time, but after that I want fast transports.

SWG (preCU)
Now anyone that never played could really care less because its no longer possible to log into SWG (preCU). However, some of the happiest moments of my life (so far) were in SWG pre CU.
Combat & movement thats out there now? Even though it has deficincies elsewhere a majority of the MMORPG's out there now cannot touch DDO's combat system. Player skill makes a much larger impact than gear and build.
I love the tactical combat involved and, while I generally hate politics, I do find it interesting how much of it is present in EVE.
I also love the fact you actually risk your ship in combat. That's a feeling you don't quite get in any other MMO's I've played (which I'll admit is few). I don't have my hands on any +5 implants yet, or snakes, but I can only imagine how freaked out someone would be to be on the edge of losing those!
As others have mentioned, offline training is awesome too. I love being able to progress when I don't feel like playing for a week or two. Even with making money, I mainly trade which only takes 30 mins every couple of days. I *also* have a generous reimbursement policy from my alliance which covers about 1/2 of my costs currently. While that's not exactly 'gameplay', my point is it's great having a very minimal grind to do what you want! Yes, real time training often takes awhile, but I don't have to bore myself with the game just to get where I want.
I also enjoy the varied, and meaningful, PvP. Currently my alliance is at war with a previous enemy. During the time we had a Non Aggression Pact, we did a LOT of learning... and they didn't. It shows. We're absolutely annihilating them. We've smashed their fleets. Our recons are disrupting their industry nearly 23/7... It's not a quest we got from some NPC, it's all because we want to!
There's quite a bit more but I havn't enjoyed any other MMO as much as I have enjoyed EVE.
