So, I haven't exactly been following this game until very recently, so if someone shoves an obvious link in front of my face and calls me a dumbass--well, sorry.
Anyhow, I'm viewing all the videos that I can find for AoC, but I there doesn't seem to be any that detail any NPC Interactions or how quests play out. I read in a dev diary (or something similar) that the quests were supposedly presented differently in AoC (in other words, not the boring text window containing the quest description). Supposedly there there's branching dialog with some NPCs with voice acting and all that jazz. However, all the videos seem to focus on head-lopping pwnage.
As an aside, this is one thing I have found annoying about this game since I started to follow it. By reading developer Q & A's and such, its easy to see that quite a bit of detail is being put into making a very compelling world to adventure in, but most of the videos sidestep the details and go straight for the blood and boobies.

From what i have seen there will be voice over and text. But text not as comic bubbles but more like subtitles in movies. Well, the journal will most probably be a book. Somewhere a dev said there will be no "Kill 10 rats" quests. I only can guess, but i think the quests will be short stories like "Free the Slave" at the very beginning of the game. Its about freeing a slave and kill her owner for the key to open her chains and then guard her to town. Someone talked about destiny which might be sort of yyour very own epic quest.
Yeah, they really make clear that combat is a huge part of the game. Raid, dungeons, PvP and GvG (fortress siege) and mini games like Capture The Flag.
As far as i know Funcom never made a movie with boobs. The people do. If you are familiar with the fantasy genre, then boobs are a MUST. I am very happy that Funcom did this and they are not responsible for waht people make out of it. I just hope there are enough mature fantasy enthusiasts on my server
Look at this. Its from Luis Royo. I think he painted almost all covers for a gazillion of fantasy books. Do you think the boobs are wrong in this picture ? Oldschool fantasy is always about brutality, and feeding the naked maid to the beast. Or about the daemonlike baldemistress or the guy with muscles fighting for honor

If you've ever played old-school AO, you'd know that FC makes INCREDIBLE quests. Nothing repetitive, nothing generic.
I wish I could dig up a few O-Forum quotes from the dev types. A ways back, Erling responded to some outcry about the focus on the blood and the boobies. He basically expressed it that they had focused on things that they felt made AoC different than other fare. However, perhaps the way that they pointed to those things made them seem more juvenile than they intended, and perhaps they'd have to be more careful in the future to better convey what they intended.
Pretty much all the quests that I've seen via video have been done more cutscene format. The quest giver speaks to you, or it's all text, and you have responses that lead you to the quest, it makes you feel part of a conversation, as opposed to just a typical MMO-style quest. It may have been in one the old Italian interviews that it came out that different responses could even lead to different outcomes. I would not suspect that for many quests, and I have no idea if it's still a part of the game.
My point is that Funcom, what we've seen of them, has taken steps to make quests feel more interactive that just hitting accept in a box. I think someone could dig up some of those videos if you really want to see 'em. I will however, agree with your point that not enough of those kinds of video's are out there.
Here is a link to a video presentation that was given in Tromso. At about 5 minutes in he gets to the first quest that you will get in the game. You can see the various dialogues options, and can barely hear the voice overs for that specific quest.
The torrent works in that link's comments, if you can't get it to stream. It was taking a while for me when I tried.
There will be many voice overed quests, but the majority will not be voice overed.
With the voiced overed quests, there will be branching dialouge comparable to Dreamfall or KOTOR.
There have been some videos showing some voice overed quests, but I cannot remember where I saw them.
