Briefly and simply: NVidia keeps track of its different speed levels with the last 3 digits of the number (and sometimes some letters after those), and the generation with the first digit.
Basically, a 6600 and a 7600 should provide around the same level of graphics performance, but the main difference is that a 7600 is a newer generation and supports more features. The 8600 is also supposed to be the same level of performance, but with even more new feature support (DX10 being the biggest). Obviously they aren't really at the exact same performance levels, but that's how NVidia chose to map the cards. The X600 series are supposed to be the mid-level cards, the x800 and x900 series are the high end, and the x500, 400, 300, etc.. are lower level cards. (And are not the best for gaming with)
That's the quick dirty explanation. I'm sure someone with more time can come along and explain the feature differences, or you may want to Google them.
