Title more or less says it all. No more college = more time to game, and I can't really find anything else that I want to play right now. So, besides BC coming out, what are the huge differences in how the game has changed over the last year or so? Not "well there is this new zone," more "well now this is what people do."
Also, any class recommendations for somebody who will never engage in PvP? Just something fun to play that can accomplish a lot by themselves and in a group in PvE. I don't mind grinding at all if my class is good at it; I don't really like raiding.

patch 2.3 made changes to the under 60 game
so that solo levelling has never been easier

Levelling to level 60 is faster than before, voice chat is now built in to the game, some UI changes with regard to tracking and quests, it runs better with Vista now, some heroic mobs were converted to solo mobs, there's a new PvP system called the Arena.
And then of course there's all the stuff TBC added, which is a huge amount.
I think you'll find things have changed dramatically, particularly at higher levels.
Each faction has access to Paladin's and Shamans now.
That's all I can think off the top of my head.

LOL. You got a few hours? Ok, I'll assume you really would like an answer, so I'll try to come up with a few major differences. Mind you this is just off the top of my head and I'm sure there are others I'm forgetting.
1) Cap increased to level 70.
2) Flying mounts introduced.
3) Tons of new skills introduced from level 60 to 70 and more from 1 to 70 as well.
4) New professions Jewelcrafting and Prospecting and professions increased to 375 max.
5) Entire new world of Outlands including 7 new zones, new instances, heroic mode instances etc.
6) 2v2, 3v3 and 5v5 PvP Arenas
7) Tons of new armor sets, weapons etc including PvP sets etc.
8) 2 New races, Dranei and Blood Elves including new starting areas, lore, major cities with auction houses, bank, etc.
9) Paladins for Horde, Shamans for Alliance
10) World PvP objectives
11) New BG, Eye of the Storm, new reward system for BG's requires marks and honor.
12) Guild Banks.
As for what people do? All of it is quite popular.

I suggest going with a hybrid and something that has healing abilities. Palies, shaman perhaps. Very good to solo and very welcomed into groups.

Not enough to make the game more fun... unless you enjoy grinding endless hours be it for faction or gear. TBC was a big disappointment IMO.
When some one begins to think of WoW is 1 big grind has just played too much, take it in moderation... whats the hurry to gain max faction or to gain all T5 gear etc (I see that all too much)... take it in moderation, get into a casual guild that does not force players to raid every night.. on bloodfeather i was part of the <weekend warriors> guild.. as the name suggests we only raided on weekends, and we made good progress Zul'grurb was our stomping ground and we hooked up with other smaller guilds to run the 40mans. Some times i would go days without logging on... 3 years on I am still playing.
I have been away from wow for 2 months and get my broadband on friday( moved to a new appartment... nightmare getting phone and broadband connected) and hope to find a casual guild, 20man zul'aman and the coming 20man sunwell should keep me happy till WoTLK this summer.
On topic Its a good time to come back.. you got the whole expansion to explore, plus all the updates in the year since release, and the forthcoming 2.4 content patch and after that the new expansion sometime this year.
The biggest chance you'll find is that raiders no longer destroy everyone in BG by just looking in their direction. Raiding gear now is mainly used for PvE.
Even though you said you don't pvp, you can get raid eqivalent gear easily through arena system, and it takes much less time and effort to get it too, so you might get tempted to do it.
Eh. The one thing you maybe won't like is that now PvP pretty much IS the center of the game due to the new honor and arena system.
