Looking for a game where player economy is very importent, and you can be a crafter without ever fighting, something like old SWG artisan. I have already played EVE for a year and a half and am looking for something different.
If you aren't too picky about graphics, then try Goonzu. In that game you only have to kill probably a total of 3 critters (for newbie tutorial) to gather initial capitals, and then start your own crafting business afterwards. Goonzu is all about crafting & trading & town politics. You can definitely level with crafting alone in that game, but you have to be very very smart with money.
Second Life is the only one that I am aware of the fully meets that limitation.
You can do it in LoTRO, with help from a Kinship.
Probably in others as well, with Guild help.
But, there are usually plenty of Level Capped crafters around such that it is really to no one's benefit to 'baby' a low level along in a crafting career.
runescape, can craft pretty comfortably up to 70ish in all skills (which wil take SEVERAL YEARS depending on play time) without very engaging in combat, although it helps
