friendly, non-elitist, casual but up for sieges.. any guilds out there?

Looking for a mature guild, willing to tolerate irregular hours, primarily in it for the fun and not the loot (all guilds start like that... but...); which loves the thought of some fun hectic pvp, but is aware it'll never be the bestest greatest 24 hours a day all-conquering grinders.

Any good sites where I might find that?

Read through the guild section here, or the guild section on the main AoC boards. You'll notice a few of the same guilds on both, some pretty well established ones already. Really, read through them to get a good idea of what they're about. Some of the guilds are planning on the rp-pvp server, but doesn't mean they're going to be only about pvp, so dig around a bit to get the whole picture.
