i read an online review that said the biggest problem with the game is that there really isn't much of a challenge when it comes to fighting..i'd like some opinions there

The game is like a John Woo movie. Most critters can be killed in one hit, but there are a whole lot of them.
So to a certain extent, yes combat is easy. It largely depends on the spawn rate of the area and what part of a map you are on. Places with high spawn rates are tough.
OTOH, there are bosses on pretty much every map which take some effort to defeat. And until you can, you'll have to run from them.
And later on in the game, when equipment starts to become hard to find, it's very tough indeed. There are some areas in the game that are almost impossible to go.

I decided to try the game a few days ago. I liked the MCC or whatever its called but fighting was hella boring all you had to do is go through an area in assault mode and then go back through the area in harvest mode.
It would be a great game if it wasn't for that in my opinion.
Well, like I said, it really depends on the area. The early areas are pretty easy, with a low spawn rate and bosses you can usually run from. Even later on, a lot of maps have low spawn rates, so a lot of people do just their characters sit unattended (AFK leveling it's called).
However, if you do want a challenge, there are places for that as well. Mostly the dungeons, where the spawn rate is quite high. The first one is pretty easy, but the later ones, starting with Porto Bello's last map, have pretty high spawn rates, at least in the rooms. Unless you constantly use skills, you won't be able to keep up with the the new critters spawning. And you also start running into bosses you can't run from. I guess the giant cockatrice is the first one of those, around 65-ish in Rion Prairie.
And then, once you hit vet, you have to constantly use skills to survive in the 100+ areas, or team up with other people (or both)
