I'll say this might be a bit of a stretch..but Ultima Online may be able to fit that. A high ranking magically enclined character can "polymorph" into quite a variety of things (you can turn into monsters or simple critters). I know a long time ago you actually gained armor or HP based on what you polymorphed into but I don't think this is true anymore. Also, UO has an ability that allows you to tame creatures to become your pet, you can actually have more than one pet at a time and I'm pretty sure you can increase your pet's abilities by using them in combat. The pets are actually quite good too as you can tame very powerful creatures such as dragons that are quite useful or something as simple as a rabbit. Lastly, UO doesn't have a leveling system but instead they have a "skill system". Your character is defined by individual skills that you are trained in, you can only master a select few so you want to choose wisely.
Other than that, I think the game might be a bit dated for our time. I'm not so sure I would recommend it but it really is the only thing I can think of.
