Help me find the right game, Vanguard... Pirates.. EVE?

Played:

Neocron: 5 years (perfect for me in every way, except no updates or players anymore)

WoW: 2 years on and off. Way too simple.

Guild Wars: pvp sucks, too organized, I prefer open world

Hit 39 in Hellgate London, did pretty much everything, became grind.

Hit 58 in AoC, grinding, too many instances, etc.

Played EQ1, UO, AO, SWG, CoH/V, Face of Mankind, Earth and Beyond (loved it!), Daoc (hated it)

I'm the kind of guy that plays with setups, always trying to come up with some obscure build and alternative way to design my character.  I like depth and a challenge, that is what I'm looking for.  I tried Eve, wasn't fast paced enough to keep me interested, although I admire it.. was kinda lonely, never got in deep enough.  Tried EQ2, lots of skills and pretty good AA system, still became straightforward grind..

Would I like Vanguard?  I like flying mounts, big world, has a sense of mystery.. or is it too easy to figure out and would become grind?

What about pirates of the burning sea?

Should I suck it up and play EVE all these years after it launched.. until I figure it out enough to compete beyond the level of a mining drone?

Thanks, sorry if post is long and dry.. help!!!

Pirates is like Eve, just much more fast paced combat, and, who doesnt like to go zoom zoom in ships? But I'm a fanboi of the game, you cant trust my opinion much.

Currently restarting World of Warcraft :/
