to my understanding retail servers are going to lock you to one side or the other once you chose a side you use a 2nd server to play the other. i myself will be on destruction prime time us with my friends who sleep at night and on later on and oceanic server to play the order classes i love with people who will be on late (i work 3rd shifts and play at work alot too so its all good)
in the first week or 2 ill try out some classes from each realm befor i decide. i will not only base my choice on how the classes work, that would be a lie. ofc ill think about the population as well - i like to be the underdogs, but if the players of that realm sux bigtime as well, there will be a chance that ill chose the other side if there are a class that is just as much fun to play there. ofc it can be really hard to tell during the first / second week, but it gives an idea. and yes, ill stick with the race / realm when i finally chose one, not matter if alot of n00bs rerolls.
I'm going to try out a few classes at release from both realms - as I'm sure many will be doing. Though I'm determined to find a class and stick to it, rather than create loads of different alts, I'm currently considering either Goblin Shaman (most likely choice) or High Elf Archmage.
Destruction is the side I'll play for on my main. However, I also plan on having at least one Order character. I'll play on a different server, of course. I would never switch sides if my side was getting trounced, though. I'd only swap characters if I got bored or had something I needed to do on the other toon.

Switching realms when the other side is winning is the worst thing one can do... It will only make things worse for everyone...
If the other side is winning, try to find new people to join your side, as only ballanced WAR's are fun..
