Best bet would be to pick one server for order and another for destruction, which is what a lot of people I know who will be playing will be doing. That way you can see how things play out over the first few months. I still think the ultra competitive pvp types will roll destruction because for some reason pvp'ers like to play evil looking toons and don't like playing short, stumpy dwarves or metrosexual looking elves.

Funny thing is that a lot of players are going to join WAR thinking "Destruction = Horde" and be really surprised to discover just how dark Destruction is. You're the bad guys, and not even realistically bad, they're suicidally bad - they want to destroy the planet they live on.
Fortunately, a lot of people don't seem to care, as population on Destruction has been higher than Order.

My experience on WAR Destruction side was pretty good.
I get the occational group that has no idea what they are doing in scenarios, but overall good community.
The thing is, the community depends on the server you go on, not really the side you go on.
Sure, the destruction side might harbor a lot of idiotic players, but so does Order. It was that way with WoW and Ally/horde.
I've seen maturity and immaturity on both sides.
So, I'm going destruction and hoping I pick a good server.
