It all depends on how many skill points you want to spend on trade skills. Im thinking about having five trades skills: Herbalism, Alchemy, Tailoring, Fishing, and Lockpicking. I might whitle down the list once I get an idea of how many after I play the open beta, so I might only have three or four, not five. Of course I will be playing as a human to get that bonus to skill points to help me with my trade skills.
The plus to only picking two trade skills is that you wont have to kill mobs for the majority of your exp to get skill points so you can reach the higher tiers of the trade skills sooner. It all depends on how much you want to trade skill and how much you want to creep for you exp than doing quests for exp also.

Ok, basically it is like this. You have enough points to keep about 2 or 3 mastered at once. I have tailoring, herbalism, and alchemy. To have something like Alchemy, you need the gathering side of it (herbalism), and that takes up a certain amount of points to be able to collect what you need for your current skill level in the corresponding trade. Tailoring is good because all you need is that once skill and you find the cloth off of enemies and auctions. Some people will buy all of their supplies and skip mining/tanning/herbalism and use those skill points for other things. Once you get to level 25 gear, your tradeskills will cost alot of points to maintain. Your best bet will be to pick 2 things you want to make, then train in those and the collecting/gathering skills associated with them. Or, if you want to buy all of your resources (very expensive if you must buy spells as well), you can train in 3. Another thing to consider is that engineering and mining both take ore, so you only need mining. Tradeskills aren't really something that is easy to concentrate on in WoW, but more of a side-game. You can't get to the next level in your tadeskill without have skill points that you gain in combat, for example. There is a possibility that there will be artisan quests that will change this after release, but it is just a thought. The main thing to consider is whether or not you want to spend alot of money in that tradeskill that you could be spending on gear/spells. If so, then you can train in more than if you need to just use the gathering tradeskill to supply you with materials. If you have any more specific questions, feel free to ask me.

How many you have is going to be a personal question. Your going to have to balance your skill points and see just what you can do and how well you can do it.
Picking up any skill can cost you anywhere from 1 - 100sp. Then each lvl of experience beyond that will cost you even more.
Currently I have Expert Tailoring. Tailoring cost me 50sp, just to get the skill. Then to advance to the next lvl cost 100sp. Cost was 400sp to go from Journayman to Expert, and it'll cost me 1000sp to go to Artisan lvl.
I picked up Herbalism for 50sp, it will cost me 300 for the next lvl.
Now, not only are you looking for skill points, but you also need experience with your chosen skill. I may have my 1000sp for Artisan, but I will also have to have something like 150+ with the skill. Plus buying the recipes.
Currently my character has Herbalism, Skinning, Tailoring and Enchantment. But at varying lvls and abilities. Plus, Enchantment was just reworked, so I have yet to see what they did to my skill I'll just have to check tonight...
So, what you can do vs what you can afford, is totally up to each player... plus, what is usefull..
